Healthy lunch inspiration needed!

I'm wondering if anyone has some tasty ideas for lunches I can easily transport to work in a container. I am trying to be as healthy as possible. Some days I can take left overs but towards the end of term I found myself grabbing a pasta salad meal deal or a soba noodle pot on my way in which were neither very healthy or enjoyable! In winter I do make batches of soup and enjoy these but don't want to go straight to soup when I go back in September as it'll still be warm weather and I'll be sick of it come Christmas!

.I have a fridge and microwave to reheat.
. I can't stand tuna, mayo or eggs, don't mind chicken but not every day. I don't like sandwiches at all.
. I tend to eat a cereal bar on my way to work in the car then once I arrive at work it's all systems go til lunchtime so by that point I'm really hungry, need it to be filling and keep me going til 7ish for dinner. I eat at my desk while catching up on emails so something to easily reheat and eat!

I like most veg, rice, grains, spicy food and have ideas of a yummy bowl of rice and veg with good flavours but feel stuck for ideas of how to make it interesting. Any suggestions?? Thank you!

DS makes a version of poke bowls and occasionally makes one for me. Our lunch breaks are so short though that I struggle to eat them, so tend to take cheese and crackers or a sandwich usually for speed.

Packet of Tilda brown rice
Diced cucumber, red pepper, spring onion
Tofu cubes - air fried until crispy
Gochugang, soy and sesame oil to dress

The above makes enough for a couple of days.

Sometimes he does tuna instead of tofu, but I don’t eat that version.

Or but those sachets of cooked quinoa and add salad/herbs/feta.

The quick roasting tin cookbook has a section on lunchboxes, there’s recipes like chickpeas, halloumi and red onion salad, or cauliflower pilaf. Even if they’re not in the lunchbox section, they generally transport well, I’ve found. (Discovering frozen cut up butternut squash was a game changer in terms of prep time!)

These are great, thank you!
