Help with a casserole, please

My parents got some bargains from Tesco and gave me a bag of casserole veg. Dad asked if I wanted some meat for it, then left it on the side over night, so I need to cook it!

I have no idea what to do with it, so I'm hoping that someone here can help.

start by browning it off with an onion

so did you get meat for it or just the veg? Why not just make a pot of vegetable soup? Sweat some onions in a bit of olive oil and butter. Add the bag of veg, a peeled potato and some stock, salt & pepper and cook until all the veg are soft then blend.

I've got a bag of casserole veg and a tray of defrosted casserole beef.

I'm waiting for a taxi from the hospital at the moment, so I'm going to do it when I get back.

I always do casserole in the oven, but you could probably also do all this in a pan on the hob.

Stick the oven on - about 180c.
Once you've browned the meat and onions, put them into a casserole dish.
Then sweat off the rest of the veg a bit in the pan, just to get it started. Then put that in the dish too.
The add stock (cube and water is fine), tomato puree, mustard powder if you have any, herbs and heat all that up, getting any stuck on tasty bits off the pan, and add that to the dish.
Add a bit more water if you haven't done enough to just cover the meat and veg.
Stick in oven for about an hour and a half.

I usually make dumplings and add them in for the last half hour, but jacket potatoes are also handy because you can just shove them in the oven at the same time.

It occured to me (rather late) that it'll be very wet if you follow those instructions! Probably too late now, but you would have to mix some oil and flour in the pan before slowly adding the stock, to thicken it up! Or add cornflour later...

lol There was so much meat and veg that I didn't have too much worry about liquids! It was nice and worked quite well. Dad gave Tink hers because it wasn't done before I had to go out and apparantly she liked it.
