Anyone made apple sorbet?

I have a load of apples at the allotment and would like to make sorbet, recipes seem to be either 1)juice the apples and churn with some cling sugar and lemon juice or 2) stew the apples and add to a sugar syrup, blend the lot, chill and then churn. Without trying both , hard to tell what would work best so I’d love to hear from anyone who’s done it, either way.

I've never made it but had it in France with a shot of Calvados poured over. I'm happy to come and test it when you've made it!

🤣. You obviously enjoyed it then! The french website recipes I have seen tend to be of the apple purée plus sugar syrup variety.

I think it would have been made with stewed apples, it seemed to have actual fruit in it, rather than having the thinner texture of something like a lemon sorbet. You will have to come back with an update when you have made it.

I have. Stew the apples first with sugar and lemon, leave to cool before blitzing as fine as you can and then churn

I make ice cream for a living! For apple sorbet, we use freshly juiced apples, lower sugar content apples work best (eg Granny Smith). They have the best flavour and the sorbet holds better, without having a slushy texture. Hope that helps!

That’s great advice from a professional @canihaveacoffeeplease ! My variety unfortunately isn’t Granny Smith, it’s Ellison’s Orange which is a bit like a cox. I’ll give your technique a go and add some mint!
