I always like to have some pesto in the store cupboard/fridge for emergencies. Sacla has been my go-to but lately I'm finding it too strong and intense. Any suggestions for something milder please?

It's really easy to make your own. Pot of basil from the supermarket, olive oil, pine nuts, grated parmesan and seasoning all whizzed up together. Job done.

and a clove of garlic.
I dont even bother grating the Parmesan. Just chuck it in cubes and let the blender do the job.
Ensure you cover the top surface with enough olive oil when storing in fridge in jar or tupperware.
you can also freeze it into ice trays.

Mix in a bit of creme fraiche or, for a more long term fridge option, Philadelphia cream cheese.

As mentioned pesto is really easy to make and you can play with recipes and it always works well. I regularly make it with basil and spinach (which may work for you as it makes it less strong) or wild garlic, with cashews, walnuts, hazelnuts, with garlic (usually lots!) with chilli, with different hard cheeses. Just chuck it in a food processor and blend.

Pesto on a jacket potato is one of my favourite meals 🤤

I used to make my own. It’s a much stronger flavour (especially the raw garlic) than shop bought - DH and DD didn’t really like it and it made their mouths tingle!

Another one for make your own. It is easy assuming you have some kind of blender and can be to your own taste. Personally I quite like parsley instead of basil and I leave out the Parmesan. I then freeze it is an ice cube tray and put the frozen blocks in a little bag and have them ready in the freezer whenever I need them.

Another make your own one here! We made a lush one last summer using the greens from carrots we'd grown. Also sometimes use sunflower seeds instead of pine nuts, doesn't seem to make that much difference (except to the cost!).

I use a Jamie Oliver recipe
1 large parmesan, 1 packet chopped almonds, 1 packet pine nuts, fair amount of olive oil, 1 clove garlic, lemon juice, one big and one small bag of basil..

Put it all in the magimix. Freeze in portions in little baby weening pots. And reheat gently in a pan as and when you need it.

So much better than shop bought :)

Thank you Coffee and Poonu for your Tesco suggestions. I do make my own pesto sometimes but as mentioned, on this occasion I was really looking for an emergency store cupboard or fridge alternative.
