Can't sleep so thought I'd share a recipe I've become dependent on! No idea where DH got this from, he made them last week and I've had them four times since 😬
Ingredients for one portion (makes 3 scotch-style pancakes):
1 large egg
50g oats
110g cottage cheese (I used longley farm low fat to keep cals down but you can use full fat if you prefer)
1tsp each baking powder, cinnamon, vanilla extract
Pinch of salt
This is an adult size portion but you can half it for a LO or make smaller ones.
Method:
Blitz ingredients in a food processor or nutribullet until well combined. It's quite a thick mix but should only take 30-40 seconds.
Heat a pan up on a medium heat. You can use non stick but I'd recommend cooking them with some butter. I used about 5g for the above quantity.
When the pan is up to temperature spoon in the batter (around 4 tbsp per pancake). Cook 2-3 minutes until golden brown and set at the bottom.
When ready, flip and cook the for another minute or two. They should be a deep golden brown colour on both sides and firm to the touch. It's a forgiving recipe so use your instincts on the temperature and cooking time.
Plate up & enjoy with whatever you fancy. They aren't sweet on their own so recommend honey, maple syrup, or jam alongside yoghurt, fruit, peanut butter, etc. Nutella would be tasty too I'm sure.
With low fat cottage cheese these are ~370 calories per portion (not including butter for cooking). They have 25g of protein and are packed with calcium, fibre and B vitamins among other good stuff.
Their flavour is full, like wholemeal, and the texture is tender making them so satisfying to eat. I find they also fill me up like a proper meal, more so than crepes.
You can also add some extras to the batter before cooking like blueberries or some chocolate chunks, or use different spices I'm sure.
