What to serve with roast lamb tomorrow?

I've got some friends coming for lunch tomorrow, 4 adults plus kids. i was thinking of doing a roast lamb with all the trimmings. Now i'm thinking "do something more exciting" and also that i can prepare mostly in advance.

i was thinking roast lamb, couscous, some kind of green bean salad...

Any great ideas out there?

roasted veg - aubergines, courgettes, butternut squash, sweet potato, red, yellow & orange peppers. Crumble in some feta cheese once cooked and serve with cous cous and a herb salad.

Cauliflower cheese and baked potatoes, cut in half and baked in oven

dauphinoise (sp?) potatoes, buttered carrots and peas and cabbage with garlic

roasted veggies?

like red/green peppers, courgettes, onions, garlic - drizzled with olive oil and baked in oven?

mumonthenet · 25/05/2008 18:27

wow snap thom, though yours sounds much more interesting than mine!

Slow roast leg of lamb on a rocket salad sprinkled with pomegranite is scrummy!

I would do it with Rosemarie and garlic and salty new potatoes and honey and thyme carrots - we had it Froday when DHs parents were up and was scrummy and I impressed everyone by using rosemary and thyme out of my herb garden!! Da Dah!!! (DS fave saying at the moment!)

Sorry Rosemary - bleugh to lamb and pink sauce!

Twinkie - how do you make the salty new potatoes and honey & thyme carrots?

I like my lamb slow roasted for about 4 hours or so. So it falls off the bone.

Thomcat · 25/05/2008 18:42

I'd put lamb in on low temp for 3 hours and then in the last hour or so I'd chuck in the roasted veg if your doing them.

Cauli cheese can be done in the am (just blanch cauliflower and make a cheese sauce and pour over, grate extra cheese on top) put aside until later then bake for about 30 mins and serve.

Par boil new pots whilst heating up olive oil in roasting pan - throw in new pots when almost there - add lots of maldon sea salt, fresh rosemary and tiny slivers of garlic and then cook till crispy on high heat - always best to chuck some meat juices over them too so they are really scrummy!

Honey and thyme carrots - chantenay carrots bolied, drain, add honey and sprigs of thyme (got to be very fresh small leaves as they will be too strong if older leaves), and serve, DONE .

amidaiwish - that looks lovely, the last link you sent.
I'd serve it with whole baby carrots that I would put in a saucepan with a bit of water, just covering them, as much butter and sugar as you dare and boiled.
I'd then blanch some savoy cabbage and then chuck in a pan with soem olive oila nd chopped garlic than I'd warmed and cook for a bit.
And then I'd cook peas in stock and stir in mint after. And I HAVE to have cauli cheese when I have lamb.

Ohhhhhh I'm so doing a roast now tomorrow, thank you
