Can I use granulated sugar for meringue?

I mean obviously I can, and I probably will 😅 but is it going to cause me any problems do you think?

I would think it would be harder to get it to mix in and you might get some weepage. Not the end of the world

My mum used to blitz granulated sugar in the blender when she'd run out of caster... just a thought

Absolutely fine, I always use granulated and make very nice meringues (if I do say so myself!)

Great thanks all. Blitzing it was something I was considering but would involve extra washing up 😅

I run a streamlined kitchen and don’t keep caster sugar in stock - granulated works just fine in all the recipes I use, even when caster is specified. But haven’t made meringues for years.

I also only keep plain flour in stock but it’s easy to turn that into self raising so I’ve never had any issues…

If you must I'd heat it first a la The Meringue Girls method to increase the likelihood of it dissolving. Not all granulated sugars are the same and the one I have in the cupboard is quite big grains and I wouldn't use it for meringues without pulverising it a bit.

That said I seldom have granulated as caster is the same price so always buy that and use in tea/coffee etc. Just happend to have a granulated bag cos I saw them on offer in Home Savers so bought a couple! I use it mainly for making tarts.

I use granulated in everything because it is cheaper where I shop, goodness knows why.

Anyway, it's fine. Sometimes get a bit of weeping but that it minimise by a teaspoon of white vinegar and putting the sugar in pretty gradually, and it's no worse than it used to be when I lived with my parents and they did buy caster sugar.

I prefer the ‘mouthfeel’ of granulated for something which is why I stock that one (rather than price which I think is comparable and anyway I don’t get through that much). Plus I figured if I ever really needed to i could blitz it down a bit. Only now it’s that time I realise I CBA to do that 😅

Ive come across a few recipes that use half (caster) sugar half icing sugar so maybe I’ll try that…
