Roasted veg help

Hello!

Help! I am cooking a roast tomorrow and haven't made one in a loooong time and only a couple of times ever for guests! I'm also roasting a few new veggies. I've got:
Sweet potato
Parsnips
Carrots
Butternut squash

All to be cut into chunks. Also have roast potatoes of course. Usually it's just for the two of us so timings aren't as much of an issue but I'm worrying a bit and can't remember if I need to parboil stuff! Aaaahhh! Any advice gratefully received. Also have green veg and will smell Yorkshires. The meat is chicken (2.4kg). I'm sure we'll cobble it together but any advice on how to make the process less stressful would be great. Thank you very much!

I don't parboil before roasting but if I want to speed up the cooking time I do chuck things like potatoes into the microwave before the oven. Just seems easier somehow.
But it'll all cook, given long enough, so it's up to you and your timings really. It's all about the timings with this kind of meal isn't it? So a microwave blast of the veg might help.

I wouldn't parboil them either. I'd guess about 45/50 mins.

I would only parboil potatoes for roasting as that helps make them crispy when you shake them up as the fluffy bits from bashing them up go crispier

Wouldn't parboil other veg as you aren't trying to achieve the same thing

I just bung all the seasoned/oiled veg in a dish and sit the chicken on top. All cooks perfectly together.

Thank you everyone! I'll parboil the potatoes and not the others, but might give them a blast in the microwave first if they look too chunky.

If you have rosemary and or garlic chop some and toss vegetables in the stuff with olive oil before roasting.

Those would take about 35 mins in my oven at 200°. Roast potatoes about 45-50 mins at the same (parboiled first).

You can roast them early and then give them a blast in the hot oven when you do the Yorkshires. I do this if cooking for loads. Also roast the potatoes and parsnips around the meat if you want to do them at the same time.

@Cheesepleasegeez don't microwave anything. They'll go mushy. (Ok maybe the potatoes instead of parboiling).

I did my rosemary garlic roasted new potatoes for my Father's day customers and they were well received.
