I've finally got the freezer nearly empty so Im looking for some new ideas.

Usually do: Lasagna, Cottage pie, pasta bake, stew, soup etc Anything that a bit more unusual or lighter for the summer?

Thanks

Make flavoured butters and roll them into a sausage shape, wrap in clingfilm and freeze. Just slice a piece off for meat, veg etc. my favourites are garlic butter and honey and cayenne.

I also make biscuit dough and do the same, just slice a few rounds off and bake when you fancy a sweet treat.

Yoghurt bark can also be nice.

Pulled pork, but I freeze the lumps + sauce in suitable portions before pulling apart.

Ragu that can be used for spag bol, lasagne, moussaka, cottage pie.

I cook a big batch of caramelised onions & freeze in little pots - useful when you need half & onion & CBA to sweat it for 20 minutes.

Also a basic tomato sauce frozen in suitable size containers.

When I have some spare energy, I make loads of individual spanakopita (samoosa style) and freeze them individually. They make great snacks cooked in the air fryer from frozen.

We don't have roast lamb/beef often but when we do, I always try to make sure I have a big enough joint I can freeze a big chunk that then helps me to create a quick and easy curry or a flatbread type meal at some future date.

I freeze mashed potatoes in portions rather than as part of a combined dish for ad hoc use.

When I have excess fruit, I wash and freeze it in bags for smoothies.

Salmon en croute - I make individual ones instead of one big one.

I freeze bread sauce and cranberry sauce, because DD1 always asks for them with roast chicken.

Most of the time, there’s only two of us; so I use half the mince in a recipe for four; but put extra lentils in - then freeze two portions.

As per pp, I freeze cheese scones.

Yes to pulled pork, I freeze it in portions in bags so you can flatten it down and it defrosts quickly too

Meatballs
burgers
falafels

Yes yes to pureed and diced fruit - for smoothies, pudding, bellinis...

Wedges of lemon/lime to use instead of ice cubes in G & T
Grapes to keep wine cool.

Veg fritters

I’m following along for ideas and am really interested in your batch cooked pasta bakes? What type do you do and do they not go soggy when you reheat the pasta?

Cheepcheepchirp · 24/06/2025 23:19

Caponata frozen flat in bags and used as sandwich fillings, toast topper, with rice or couscous, or a jacket potato.
i make Millie’s cookie dough (google) recipe and freeze that in a sausage shape and cut cloves to bake as pp.
add leftover ends of bread etc to a bag then blitz it all for breadcrumbs (i then add cornflakes/panko/either garlic granules or salt/or sugar to use as a coating or topping for chicken nuggets/apple crumble.

I batch cook and freeze pasta bakes in individual portions and they seem to reheat fine
if I’m doing a big portion and it’s all for the freezer then I ever so slightly undercook the pasta (by the smallest amount!) which helps
Mine are usually to use bits up so a tomato based sauce with whatever veg and meat I have (might be bacon or chorizo or chicken) and cheese (often mozzarella and cheddar)

Not really a batch cook but it could be.

In a small slow cooker I put skinless boneless chicken pieces, chopped onion and sliced mushrooms then I add a can of condensed mushroom soup.

I will eat it one day and then portion in to foil and add a pastry lid and freeze that, it can be oven cooked from frozen.

It would easily scale up
