How about a crushed potato salad? You boil your potatoes, then stick them on a baking tray, squash with a glass, season and drizzle with oil and roast until crispy. Then choose your veg and dressing.

You will find about a million videos on social media if you look!

I have new pots with things like:
nicoise salad,
piece of fish and lemon and capers butter sauce
boiled then fried in a warm salad,
in a fritatta.

I adore hassle back new potatoes drizzled with a buttery chimichurri, also works well with roasted crushed baby potatoes with a chimichurr & yoghurt drizzle.
I love them sliced up with onions, peppers, bacon and cabbage, lots of garlic and smoked paprika and making a sort of hash topped with a fried egg.
I always use new potatoes if I'm doing a hotpot or any dish topped with sliced potatoes (I do a few different ones)

Really good in air fryer

Toss in olive oil, garlic powder, salt, pepper, bit of smoked paprika

Then air fryer for 15 mins or so, depending on size

Thanks. The bake is the sort of thing I cook a lot.
It’s interesting you use them for slicing. I was quite resistant to slicing them thinking it would spoil the texture, which is their selling point. It would open up a lot of possibilities.

I think they should be tampered with a# little as possible, so I’d never use the first news in something like a curry that drowns their flavour (though I love potato curry). The most I do is toss them with homemade pesto, otherwise I just boil and eat with salt and butter.

Parboil till nearly done, leave to go cool enough to handle, thread on skewers, baste with seasoned olive oil and reheat over barbecue.

You are probably right but that’s not really a meal.
