Mushroom surplus

DH accidentally bought a large punnet of mushrooms.
I'll get through about 20% of it before they go off.
I don't think they'll freeze well because of the high water content, but I hate waste.

Anyone tried frying & then freezing?
Or anything else that I can cook & freeze in portions, but NOT soup.

You mean like just one big box?

Chop into halves/quarters if they are big, coat in marinade of soy sauce and balsamic, garlic if you like, roast on a baking tray. They shrink to about 1/3 original volume. We often have 500g mushrooms cooked this way as a side dish.

Mushroom stroganoff, mushroom risotto, mushroom omelette, mushroom quiche.
Mushrooms in garlic butter, or mushrooms a la Greque for a first course.
Hunter's chicken or coq au vin.

If they are little Paris button mushrooms, slice the raw mushrooms thinly and mix well with Greek yoghurt and chopped herbs eg parsley chives for a quick side salad with steak or salmon.

You might need to buy more mushrooms!

Make mushroom omlettes, I would usually allow 100g per person.
Roast with olive olive and balsamic and use as a side dish.
Make cream of mushroom soup.
Put some in bolgnese.
Make fried egg, mushrooms, tomato and toast.

Thanks for the replies, but I don't want to eat them every day for a week or more.
Perhaps I wasn't very clear, but I'm looking for ideas of cooking & freezing them.

You can definitely freeze mushrooms raw just need to fry briskly to get rid of excess moisture when you take out to use

i used to buy frozen exotic mushrooms from Waitrose to chuck in risotto and they were actually fine! So I vote to slice and freeze and take your chances throwing them into bolognese etc!

I have bought sliced frozen mushrooms before, so can you just do that? Then they are ready to add to things when you need.
