I have one that you can use fish in. Its like a casserole with courgette, mushroom, peppers, tin toms etc in and at the end you add cream. If you want it will type it out for you.

Fry onion, add peppers and courgettes, tin of tomatoes, sweetcorn (frozen or tin), tin of baked beans, tin of mixed beans, chilli powder, turmeric, cumin and paprike. Add stock/water and cook until soft. Then empty a packet of plain doritos on the top and a lot of cheese, then grill. Known affectionately in our house as Taco Slop

Fry off some veg (courgettes, peppers, aubergine, broc is all good). Add to a casserole dish with a tin of chopped tomatoes, a tin of mixed beans, two teaspoons of chilli powder (or to taste). Mix together, then sprinkle over some grated mozarella - up to a cm thick (or less if you're dieting!) Cook, uncovered, at about 180 degrees, for about half an hour.

Lentil chilli

Fry onion garlic peppers add tin of sweetcorn, tomatoes, baked beans, and kidney beans. Add 2 oxo cubes in a pint of water and 250g lentils. Add tumeric, chilli, cumin and paprika and simmer for 30 minutes.

I do mine with chicken breast but this can be changed to fish instead.

Fish/cod or whatever fish you like

1 onion finely chopped
2/3 carrots
2/3 courgette
2 peppers [red/greenyellow whatever you have)
some mushrooms
tin of chopped tomatoes
garlic
stock cube
white wine optional (i prefare to drink this)
small carton of single cream.

Fry onion until soft, chuck everthing else into the pot EXCEPT cream and fish. I usually only add about 1/4 pt water to the stock cube as otherwise it can be too liquidy when you add the cream. Bring to the boil and simmer for about 25 mins then add the fish dont cut too small as it will break up. Leave to simmer for about another 10 mins check if carrotts and fish cooked, when they are add the cream and stir ready to serve about 5 mins after cream added. I usually have this with new potatoes or rice.

There's also a fantastic Nigel Slater chickpea and potato stew (also nice with carrots and parsnips) which we eat quite a bit. I'll type that out for you if you want as I can't find it online.

The man you need is Bill Sewell - his veggie cookbooks are full of wonderful stews - but they're hard to find unless you're in Hereford or London. here

I have a great cook book that has one pot/claypot meals in it veg, meat, fish etc. Give us an idea what you like will see if anything is in it for you

Cauldron veggie sausages in casserole dish and cook for 10 minutes, add one jar of passata one tin of chopped tomatoes, tinned cannelinni beans and tinned black eyed beans, a red chopped onion. Throw in a couple of bay leaves, a good pinch of basil, a few chilli flakes and salt and pepper.
Cook for around 1/2 an hour. Serve with crusty bread and a green salad.
