alternative to sunday roast?

!m 15 weeks pregnant and i just cant be bothered to make a roast on sunday when my mum visits me. Can someone suggest an alternative, i just seem to be looking vacantly at recipes!

Ideally stuff i can prepare in advance would be good as its the timings of the roast i cant be bothered with at the moment. She doesnt like spicy food... someone please inspire me. I think i might make warm brownies and Eton Mess for afters.....

Jamie Oliver's Five hour Lamb. Basically it's a pot roast with everything in - I'll find the recipe for you.

A ham (can be done in advance) served with baked pototes + salad

potato dauphinoise (cooked before hand and browned just before serving) with just a green salad

How about a chicken pot roast? Just bung a chicken in a big casserole pot, throw in loads of veg (potatoes, carrots, onions, parsnips etc.) add some stock , slat and pepper and garlic and cook. I tend to serve it with rice.

Or a goulash?

Or Irish stew?

TBH we have many varieties on Sundays, roasts are not special for Sunday in this house. Especially in the hot weather, I tend to do a joint of meat with cold trimmings, much easier to manage

toad in the hole with onion gravy is my usual sunday roast alternative. Batter done in advance - easy.

Five Hour roast lamb

This is a real hearty and trouble free dinner. There's barely any preparation, just a nice long cooking time which will reward you with the most tender meat and tasty sauce. Large legs of lamb are ideal for this dish as they benefit from slow cooking. If using a smaller leg of spring lamb then consider cooking for an hour less.

Serves 6.

1 large leg of lamb
salt and feshly ground black pepper
olive oil
6 rashers of thick streaky bacon
3 red onions peeled and quartered
3 cloves of garlic peeled and sliced
2 good handfuls of mixed fresh herbs, thyme, rosemary, bay
4 large potatoes peeled and cut into chunks
1 celariac peeled and cut into chunks
6 large carrots peeled and halved
3 parsnips scrubbed and halved
1 bottle white wine

Preheat the oven to 170C/325F/Gas 3.

In a large pot or a deep sided roasting tray, fry your well seasoned lamb in a couple of good lugs of olive oil until brown on all sides.

Add the bacon, onions and garlic and continue fry for 3 more minutes, throw in your herbs and veg.

Pour in your wine plus an equivalent amount of water, bring to the boil and tightly cover with kitchen foil. Bake in the preheated oven for 5 hours until tender, seasoning the cooking liquor to taste. To serve, pull away a nice portion of meat, take a selection of veg and serve with some crusty bread to mop up the gravy.

It's scrummy and easy - prepare earlier and bung in the over. Serve straight from the roasting pan with loads of fresh bread. We just bung in any veggies we have and the cheapest bottle of plonk we can buy.

wow thank you for all the quick responses. i cant decide now ha ha ha. i want them all!! Most tempted by ham but ive never done one before. Chicken suggestions are nice and easy too... oh i cant decide....

Ask her to bring something, or buy a quiche/lasagne/tart from a deli and just serve with bread and salads.

she wont expect me to do anything for her but she lives so far and she always makes DH and I nice dinner so i would like to reciprocate without putting myself out. this is making my mind run riot. i'll check back here later as i want it all!!!! thank you for such fab quick responses

It really is easy. We just take the roasting tin from the over and place on heat mats on the table, then it's every man for himself!

make it in advance, whack it all in a nice big lasage dish, cheese on top of the mashed potatoes........

oven it when your mum arrives, and serve with some frozen veggies?

i made your lamb and it was gorg, my Dh doesnt eat lamb so i made him a chocolate cheesecake to compensate. He ate all the lamb and went back for seconds... my mum and i were sitting like this
lovely meal of your lamb, dauphinoise potatoes, mashed swede, choc cheesecake and raspberry eton mess. major brownie points earned for me and no effort in the kitchen at all. plus now i get to eat lamb again for the first time since i met DH 2 years ago. you've changed my life!!
