Advice needed, please.

I'm not much of a cook. I can follow a recipe but not great at substitutions, if I don't have something in or knowing what else might also work within a recipe. With that in mind, I'm looking for advice for the recipes below.

The pork stroganoff - do you think it would be ok to swap pork for chicken?

The biscuits - any advice on how to make this more like a traybake that I could slice so and I might top with chocolate?

Yes, it will be fine to use chicken instead of pork, it should work well. Chicken and mustard is a tasty combination. You might need to reduce the cooking time very slightly, so keep an eye on it towards the end of the cooking time.

Yes chicken would be fine as a substitute.

Chicken will be fine, as pp said possibly reduce the cooking time.
The biscuits should also be fine as a a traybake. I would line and lightly grease the baking tin and just press the mixture into it. Add melted chocolate once it’s baked.

Line a baking tray with grease proof paper. Double the amount of dough. Tip the dough onto the tray, spread out with a pallet knife or back of a large spoon. Cook until still slightly soft. Melt chocolate either in bowl over pan of hot water or carefully in microwave. I would drizzle hot chocolate randomly onto cooked dough but if you wanted you could use a layer. Leave to cool then cut into squares while still in tin. Put tin in fridge and chill for a couple of hours. Then cut again to make sure you have cut right through ( without scraping your tray) the cookies should then come out as nice chocolate topped squares. Store in air tight container for couple of days or in freezer.

Chicken would be fine - use chicken breast rather than thigh.

@JillMW s advice re the cookies sounds good but I have my doubts about whether the texture would work as a bar so I'd stick with individual cookies and just melt the chocolate and drizzle on cookies.

Nothing wrong with experimenting. Even if it doesn't work out doesn't usually mean it's inedible and will give you more confidence as a cook

That Delia recipe is a regular in my household, always with chicken rather than pork though, it’s better than the original recipe IMO!
For the biscuits, I would search for a different recipe if possible.
