A recipe or breakfast ideas that makes porridge crunchy texture?

Ok weird one i know. Was going to have a change for breakfast tomorrow of overnight oats or porridge. Fine for me and my boy..my daughter has sensory issues, refuses any food that isn't dry/crunchy. Therefore I generally tailor meals/dishes to her texture preference, like rice dish into crispy rice balls.

Any recipes or ideas for a porridge breakfast? I am having a blank and wondering if anyone has a recipe on hand or an idea to build a bit more diversity to our meal plan.

Baked Granola? I can’t recommend a particular recipe but there are plenty online.

That's what I was wondering, can you make porridge and then oven bake it? Would that work?

Turn the oatmeal into crunchy granola? Lots of recipes often soak in some apple juice then bake long and slow till dry. It’s a batch cook thing where you end up with multiple servings of dry crunchy cereal.

In Scotland they used to have a 'porridge drawer' into which they would pour the leftover porridge to cool and set so they could eat it in slices later. You could fry the slices (like polenta) to make them crispy?

I've never heard of saving leftover porridge, but i love that idea!

Another vote for granola. I buy ingredients including coconut oil (it’s actually solid and comes in a jar), nuts, seeds, porridge oats in Lidl and make a huge batch that keeps a few weeks. I like desiccated coconut in it and stir in dried fruit as it cools. Serve with thick Greek yoghurt and fresh fruit.

Porridge oats can be used as a coating for things you fry. Fish is traditional but you could do it to other things.

I stir crunchy peanut butter in my porridge, the porridge itself is still soft but there are crunchy bits in every spoonful.

I also stir flaxseed in, which firms it up in general, makes it less wet, iyswim.

Yes i make it all the time, i don't like porridge texture either. Use any nuts or seeds you like, i usually do pumpkin and sunflower seeds

500g oats
100g nuts
100g seeds

bake at 350F/180C for 15 mins, stir halfway

mix in 100g (or a bit more) dried fruit (eg raisins, cranberries) and 3 tablespoons cocoa powder.

Cool and put in a big tupperware. Keeps for ages. i have it with yoghurt and a banana.

I would think adding nuts to porridge before serving would give you a nice crunchiness?

But overall, if you want oats, I'm in the granola team. I make big piles of granola and it keeps for ages (unless it all gets eaten).

My basic rule of thumb is about 3 cups oats, 1.5 cups nuts and seeds and then about 1/3 (generous) cup of wet ingredients - oil, honey, peanut butter etc. Cinnamon and a pinch of salt is nice.

160 oven for 30 minutes, stirring half way.

I don't add dried fruit as DS doesn't lke it but you can if your DC will eat it - but only after cooked.

You can, of course, get all fancy if you want to - and try different spices. I keep being tempted to add fennel seeds but have resisted so far as I'm confident it would go down badly. I'm also tempted to add some lemon peel, but again, not sure how the DC would feel about that! Grin

I add cocoa nibs and walnuts for crunch and use extra large oats so that the porridge has a chewy texture rather than just smooth. I often just eat the oats raw on yoghurt in the summer
