Actually I think it is a mark of a great chef if he or she can produce amazing food no matter what the ingredient. It is after all the quality of the produce that is ultimately what is important, don'tcha think?

look, I was a painful veggie for 14 years and now I am amaking up for it with all things charcuterie and life is good.

I suppose a dhaal of some kind iwth a cucumber raita and a stuffed paratha would be passable or even some kind of cheese-laden polenta or highly starched pasta/potato dish

I do seriously admire you for giving it a go

take one veggie, remove beard and sandals and soak to remove stink of incense and patchouli.
Slice and marinate in garlic and chili, and then roast in oven with potatoes

Oh sorry you were talking about your cookbook, I thought you were talking about the mn one. Just adjust the ingredients slightly and then it will be immune to calls of plagiarism

Beany bake.

1 tin of mixed beans in tomato sauce.
1 tin of plum or chopped tomatoes
2 cloves of garlic.
1 dash of vegetarian worcestershire sauce.
1 squirt of two large teaspoons of tomato puree.
Some mixed dried herbs, or you can get the tomatoes which come with the herbs already added.
Vegetarian cheese, grated.
Breadcrumbs
Butternut squash.

Cut the squash in two lengthways and roast in the oven until the insides are soft enough to scoop out easily. Chop the insides up into smallish chunks and set to one side. Crush the garlic and mix in with beans and tomatoes, sauce and puree and herbs if extra. Add mix to squash and place the lot back into the skins. Top with cheese and crumbs and bake in oven until cheese melts.

And, I would like to add to some posters here that no one looking at me would believe that I was veggie and I haven't eaten any cheese for 5 weeks now!!!!! But I am also tolerant, dh eats and cooks his own meat and also cooks meat for ds as I don't want ds to be brought up vegetarian - he can choose to be later if he wants to but, for now, he eats as wide a range of food as possible and is quite happy knowing that he eats pigs, cows and chickens etc. !!!!!!!

Pasta (serves 2)
Bring large pan of water to boil
Peel and chop 2 cloves of lovely soft and unctious new seasons garlic and place in frying pan with a bit of chilli (to taste) and enough olive oil to cover the base. Bring up to sizzling temp and leave there for few minutes. Take off heat
When water is boling add pasta (250 grammes or so)
Chop parsley
When pasta is al dente drain and mix with garlic and chili oil and parlsey. Season and add parmesan if desired. Serve immeadiately

Are you looking for 'every day' recipes, or fancy dinner party ones? If the former, then how about:

Nasi Goreng:

Groundnut oil
One onion, chopped
Pack of tofu, chopped into approx 1cm cubes
2 cloves garlic chopped/crushed
1 red chilli finely chopped
Half a bunch of spring onions, sliced
1 cup of (uncooked) thai rice
soy sauce to taste (I use quite a bit, approx 2-3 tbs...maybe more?)
1 fried egg per person

Start boiling the rice.
Fry onion in oil until it starts to soften. Add garlic, chilli and tofu. Fry until tofu is golden.
Add spring onions, drained rice and soy sauce. Heat through.

Serve it topped with a fried egg.
