So many fruit and veg - help!

I over-ordered on my organic fruit/veg boxes for the last couple of weeks and find myself with the following.......

A large bag of potatoes
5 or 6 carrots
About 10 onions
5 large courgettes
About a million vine tomatoes
Small cherry tomatoes - 1 carton
A turnip (I think that's what it is!!)
1 green cabbage
1 white cabbage
lots of brocolli

Fruit - about 8 soft pears, apples galore, 4 oranges, 8 kiwis and a partridge in pear tree!!

Anyway, we are off on holiday next Friday and I need to use this all up - problem - kids are SICK AND TIRED of veggie soup and fruit salad for tea - husband is sick of veggie soup and pasta with veggie sauce... help me out ladies with any ideas! As these are all organic, they don't last long so I need to do something quick so I don't waste this food!! We are not veggies by the way so any recipe ideas (or ideas for freezing) welcome.

How about baked mixed veggies in cheese sauce, with grated cheese & breadcrumbs on top?

vegetable tempura?

Cook the apples up, puree them and freeze in portions for apple sauce or to put on top of cereal or mix with ice cream in the future.

Slice the tomatoes up, and cook them in a very low over for 24 hrs until they are quite dry. Bottle with olive oil and store in the fridge to toss in salads/pasta sauce/pizza etc.

Or casserole? Add some meat and a bottle of wine. Serve with baked potatoes.

Or is it too hot to have the oven on for anything like that?

half and core the pears, place face down in a baking dish and squeeze the juice of 2 oranges over and bung in the squeezed orange halves too and a cinammon stick. Bake in the oven at 180 for 1 hour and serve with cream or ice cream.

Courgettes cut in half lengthways. Scoop out a trench a bit shorter than the length of each half. Put into each trench a black olive, half a cherry tomato, a lump of mild goat's cheese, repeating until it's full. Sprinkle with a few chopped fresh basil leaves and drizzle with a little olive oil. Bake in the oven for 20 minutes. Top with a few more shredded fresh basil leaves.

Perhaps onion gravy? You could freeze it in portions to go over steak, sausages etc.

cook some rice and set aside. Fry a finely chopped onion, some mince and finly chopped cabbage with garlic, a bit of cinnamon and some cumin. When cooked mix with the rice.

Scoop out the insides of the courgettes, cut off the top of the tomatoes and scoop out all the flesh. Stuff the courgettes and tomatoes with the rice mixture and bake in the oven for 45 mins, covered in foil.
