Chickpeas - ideas please

I am the only one in our house who likes chickpeas and after years of not buying them, I’m making an effort to eat more of what I like. I am not a brilliant cook, and don’t have a lot of time, so looking for chickpea recipe ideas. Curries that I can make quickly and easily. Bit overwhelmed with all the recipes online, so hoping some tried and tested ideas come through.

I also like butter beans but other than salads, don’t know what to do with them. What are your favourite recipes?

Check out Marry Me chickpeas recipe for a simple quick chickpea meal, just add some bread to mop up the sauce.

An easy summer salad is diced cooked beetroot (use the vacuum packed beetroot not pickled beetroot) chickpeas and chopped spring onions or red salad onions. You can add a vinaigrette dressing, or mayonnaise or Greek yoghurt. Make ahead of time so the salad is pink, then just before serving add cubes of feta or balls of mozzarella.

I like butter beans too, I usually add them to stews or casseroles, they go well with lamb or venison, or I purée them to go with baked ham, or add them to cauliflower au gratin.

Also do a middle easterny thing with aubergines cooked in oven until almost cooked, top with any tomatoey sauce or roast veg leftovers, then drain a tin of chickpeas (second the bold bean jar ones and belazu from Waitrose in a jar), stir with some cumin, smoked paprika, tiny bit of chilli flakes or cayenne, and a swig of olive oil and pour on top, pop back in the oven until everything is hot and chickpeas have gone a bit crispy.

I sometimes splurge and buy Bold Bean Queen Chick peas in a jar. Way superior to tinned (which Inalso love btw).

Fry onion and garlic, add chickpeas and a bit of sundries tomato paste, bit of parsley and top with feta - really nice quick lunch.

Bee Wilson's 10-minute chana masala. It takes a little longer than 10 mins but is quick and easy. I always double the quantities which makes enough for 4 (or two portions for 2 people):

This chickpea soup is tasty and very easy to make.

The jar salad on this video at 1:55 has quinoa, chickpeas, mint, parsley, pistachios, etc. It's very good.

If I was just cooking for myself, I’d fry some paneer and add it to a Spice Tailor sauce with a drained tin of chickpeas and a shed load of chopped baby spinach. Eat with paratha - the frozen ones are excellent.

Butter beans - I like these in a veggie sausage casserole using veggie hotdogs and lots of paprika, honey and grainy mustard.

I air fry mine in oil and whatever seasoning, paprika, garlic etc and eat them like you would a bowl of peanuts 🙈

Chickpeas: frozen onion, garlic, ginger, spinach, jar of curry paste eg Jamie Oliver one, coconut milk. Have with rice.

Butter beans: frozen onions and garlic, chorizo, chilli red pesto, frozen spinach. Have with pasta.

Those are both very easy and tasty

I am bold bean co nut - I absolutely love them and can eat them straight from the jar....both butter beans and chickpeas! I make beanottos often with the butter beans, probably not the healthiest but delicious! I also like Jerusalem artichoke and chick pea soup. I could go on 🤣

I use Marsala rather than sherry (you can also use a smaller amount of balsamic for non alcoholic option) and sometimes I add in a few cherry tomatoes and kalamata olives just before the rocket.

Have you tried gram flour OP? Its ground, chickpea flour. I think its higher in protein and more fibre than wheat flour and provides a nutty flavour. It can be used with wheat flour too, say half and half if wanted.

Butter beans.
Chop some cubes of chorizo and cook. Slice onions and garlic and cook with the oil coming from the chorizo. Reduce the heat and add about 1-2T tomato paste and the butter beans. Combine till heated through. Makes a delicious side dish or even to have on toast.

dry fry some chorizo and add the chickpeas when the oil comes out. Season.
