Surplus spuds

DH has bought too many spuds yet again. Jersey Royals & Maris Pipers.

There's just the 2 of us, & we like other carbs as well as spuds.
I've got lightly-cooked latkes in the freezer from last time he did this, still haven't tried them so don't know what they are like.

Any suggestions that don't involve physical violence ?

Maris Pipers are good for fishcakes. I like the BBC Good Food recipe for ‘ultimate fishcakes’ and it’s freezable too.

Leek and potato soup or loaded baked potato soup will use up a good amount. I always do cheese and potato pie when I need to use up loads. I had a thread on here that had some great suggestions, here

Stick them in a pillow case and put them somewhere cool and dark. They'll be fine for weeks

Pop into your off licence for some boxes. Store somewhere cool, dark and dry. We used to buy potatoes by the sack and they survived months. You’ll be fine.

My potatoes lasts weeks there is just us 2 I just store them in a cupboard when they are reaching their end I just make roast potatoes you can't go wrong with roasties.

I buy maris pipers specifically for making wedges as they are lovely and floury inside, I cut them up unpeeled and toss in a little oil and into the freezer then just cook as needed.

Thanks for the tips.
We've got about 8 weeks worth at our usual rater of consumption !
The veg rack is in a cool dark place, spuds are furthermore in a black hessian bag & I know they will not last that long.

@marylou25 That sounds a good idea, I'll try it.

Make a batch of potato dauphinoise. It freezes very well in portions!
