Need some yummy recipes to introduce dried dates,figs,apricots or prunes into dd's diet please, but no nuts as nut allergic.

Doctors requested she comes off her constipation medicine and wants me to introduce these into her diet. She didnt like them on their own so yummy recipes please would be greatly appreciated! She has numerous allergies so the more basic the ingredients the better.

Are you happy with her having chocolate? My DH made a great chocolate refrigerator cake with digestive biscuits, dried fruit and nuts. You could just leave the nuts out and add more fruit as every recipe I've seen for it has different ingredients anyway. If you do a google search you'll find all sorts of variations. That's where we got ours, but I can't remember which site it came from!!!

I put dried apricots in a pan with enough water to cover, simmer for 10-15 mins and then liquidize. Lovely in plain yogurt or porridge.

Alternatively finely chop and add to flapjacks.

Date (or fig or apricot) slice- a sort of sanwich of oatycrumbly stuff with pureed dates etc in the middle. You could cook and puree apricots and mix them with yoghurt. Pureed apricots make a good jam substitute (imo)

Try weetabix cake:

4 weetabix, crushed
8oz SR flour
6oz sugar (I use brown but white fine)
6oz sultanas/chopped dried fruit of your choice!
8fl oz milk

Mix dry ingredients, add milk, mix and dump into greased loaf tin.

45 mins at 180ish, test with a skewer, serve hot with butter mmmmmmmmmmmmm

Yes, holidaysqueen she can have choc.Great about the flap jack idea too,could try that. Dd is 6 years. All your ideas are bril. I did think about the fig slice type of thing, have you got a recipe for one Madlentileater

how old is she? dd is 2 and adores 'crazy jack' soft dried fruit. she always has 3 packs on the go, apricots, prunes and figs. she thinks they're sweets bless her! so maybe no need to think of recipes if she'll have them as they are?

She is 6yrs. I found crazy jacks dried fruit but not the soft ones. Are they little packets those ones ruddynorah? Couldnt find them in the shops as i had them on the nutfree safe list

they are all quite nice cooked until softened, pureed and added to yogurt
or even spread on toast instead of jam

madlentil - do you please have a recipe for date slice? I used to have it at a friend's house when I was a child and loved it but have not had it for about 30 years!

I used to make chocolate cornflake cakes for the girls, in petit fours cases, with lots of dried fruit added to them (rather more fruit than cornflakes).

Little fairy cakes are nice with raisins in - squashed fly cakes.

yes quite small packs. last a couple of weeks or so, not snack pack one serving type size. she has some every morning and for a snack mid afternoon. but def only the soft ones. sometimes we get her a pick and mix dried fruit selection from the farmers market, again she thinks it's sweetie pick n mix. not sure how that would work for nut allergies though.

(consults stained recipe book)
8oz chopped dates (or prunes or apricots)
5 fl oz water
6oz wholemeal flour
6oz porridge oats
6oz marg
3 oz sugar

set oven to 190C
cook dates with water, in a small pan, till soft.
rub fat into flour, add oats and sugar.
(not sure if you should greas tin?)
press half the oaty mixture into a baking tray, then add layer of dates/apricots, then rest of mixture.
bake 30 mins
you can eat this hot as a pudding or cold as a snack.
Came from rose elliotts book, I think.

Popcorn is very high fibre - does she like that? Obviously not the microwave kind which is loaded with fat and salt but made fresh.

These are Sticky Toffee Cakes and are great..

30g/1oz Sultanas
30g/1oz dried apricots
30g/1oz dates
1tsp baking powder
140g/5oz s/r flour
30g/1oz Light Muscovado Sugar
1 tbsn Golden syrup
1 lrg egg
30g/1oz melted butter
140ml/5fl.oz hot water

(I have a child with allergies so I replace the egg for egg replacement powder and the butter for dairy free spread and they work fine).

Works best with food processor.
Put dried fruit, baking powder and spoon of flour (to stop sticking) in food processor and whizz up to small pieces (you can chop but would take forever!).
Put this mixture into a bowl and add sugar, syrup, egg (or egg replacement powder & water) and melted butter/spread and stir together. Then add very hot water and remaining flour and mix really well.
Divide between 12 cupcakes and bake for 18 mins at 200c/400f/gas 6/fan 180.

These really are tasty and if kids dont like dried fruit they cant really see it

Many thanks everyone. I shall certainly try all of these! She cant eat popcorn either bluestocking, has a corn/maize allergy so cornflakes are also out of the question too but can always use rice crispies instead in the little melted choc bun thingies. Oh ruddynorah, where do you manage to buy the crazy jacks soft fruit ones?

Have you tried these for when you're out and about?

Fruit and Nut Crumble:

6oz dreidn apricots
4oz dried pitted prunes
4oz dried figs
2oz dreid apple rings
1 pint apple juice
6 oz wholemeal flour (or plain if you prefer)
3oz butter
2oz soft dark brown sugar
2oz hazelnuts, chopped (can be left out)

Soak the dried fruit in a bowl with the applejuice overnight. Transfer to saucepan and simmer for 10-15 minutes, until softened. Put in ovenproof dish.
Combine the flour and butter, rub until it's like breadcrumbs. Mix in the sugar and nuts if using. Sprinkle over the fruit and bake at 200C for 20-30 minutes. Serve with yoghurt and honey, or ice cream.

Sorry, ignore the nut bit, they are definately not needed in the recipe anyway.
