Wedding dessert ideas please

We're getting married during June, and we're having our reception in a local pub that does good, home cooked food. The pub is still open and serving food while our reception is in a separate area, so the kitchen will be busy.

We're having a chicken Milanese for a main, and had suggested a caramel apple tart for dessert with pouring cream, but the pub has come back to us that they would prefer to serve a cold dessert, as they don't want to put too much pressure on the kitchen.

Can I have ideas please?
Not a fan of cheesecake, or a great lover of meringue unfortunately, or coffee/ nuts.
We do like fruity but sweet- the apple & caramel would have been lovely, would this work cold in any form? Cherry Bakewell and almond flavours are lovely, and I love a classic Victoria sponge with fresh cream, but I feel that there's probably going to be space limitations of keeping that refrigerated all day.
The options they have on their menu for general sale are the standard pub grub ones- cheesecake, sticky toffee, brownie, nothing generally complicated to make.

Lemon posset is easy to pre make and serve quickly. (Individual pots) caramel or chocolate mousse type dish?

Lemon tart.

Or something like a trio of desserts where you have a plate with 3 mini desserts on - small lemon tart, square of chocolate brownie and a mini meringue.....or similar.

We had chocolate mousse or lime parfait for ours.
Lemon tart good suggestion.
Also like the croquembouche idea - alternative to wedding cake maybe?!

I had lemon tart or raspberry profiteroles. I told them to double the lemon in the tart.

Love profiteroles, but is a pub likely to do them well? There's nothing worse that a disappointing profiterole! The raspberry ones sound interesting though?

I think brownies are the failsafe option, that we may end up going for, I do love a lemon tart though, and I will definitely enquire about mini dessert plates. I like a wobbly dessert, but my other half isnt as keen, and hes not sure that they look smart enough for a wedding.

If it’s a normal pub they probably buy in stuff ready made for pudding. You could ask them who they’d get it from and have a look at he brochure.

Yeah, chocolate is so ubiquitous, even 25 years ago, that I was adamant I didn’t want it so raspberry profiteroles (creme patisserie inside with raspberry coulis, I think) is what we came up with. I would need to dig out my box of memories to be sure. My reception was in a restaurant.

What about something like Poires Belle Helene? Poached pears with vanilla ice cream and chocolate sauce. Or peach melba? Poached peaches with vanilla ice cream.

Why not have something seasonally summery, strawberries and cream would be ideal. If you wanted to dress it up a bit you could add little heart shaped shortbread biscuits.
Another idea is vanilla ice cream served with poached cherries.

I know someone who had their wedding are made from cheese, it's great to then use as part of the dessert
