I’ll start. I don't tend to weigh or measure ingredients, and these are very forgiving recipes. I just eyeball most things and adjust the seasoning to taste.

Sauce base: mayo + sour cream.
Add dill, some other herbs and lemon juice for ranch. Add tarragon for potato salad sauce.

Pasta sauce: cherry tomatoes + feta roasted in olive oil, then pureed.
Add roasted red pepper and mint for something close to ktipiti.

Cheese toasties done in a dry frying pan: bread + cheese with mayo spread on the outside sides.
Can add spring onions and/or ham.

Beetroot salad: Beetroot + feta + apple.
Can sprinkle pumpkin seeds and cumin on top.

Cheese sauce for cauliflower or macaroni cheese: cream cheese + butter + cheese.
I prefer to make it in the slow cooker. Can thicken it with cornflour.

Fig and feta filling for puff pastry: cream cheese + feta + rehydrated dried figs
(Soaked in hot water for a bit and chopped)

Quick caramel sauce: Biscoff biscuits + hot water (no really!)

Cottage cheese
Berries ( I had frozen cherries to use up)
Bit of honey

Blend and freeze

Surprisingly delicious and is low fat/high protein dessert!

How much do you whisk the cream? Soft peaks? Do you fold in the condensed milk bit by bit? I feel like some things could go wrong here…!

Till it's quite firm, holding a peak. I usually whip cream first and then add all the condensed milk, but I think you could do it all together. Here's a recipe that will explain it better 😄

Thanks all for your input so far!
I have made the condensed milk ice cream before, which tasted good, but the texture was hard and icy. Maybe my method needs work!

Lemon posset (to serve 6):

  • 600ml/21fl oz double cream
  • 150g/5oz caster sugar
  • juice of 2 large lemons*

Add the sugar to the cream in a small saucepan and gently bring to the boil, stirring so that the sugar dissolves. Boil for 3 minutes, then take off the heat and stir in the lemon juice. Pour into serving dishes and chill for 3 hours.

*some recipes also suggest that you add the zest too, but I prefer it without, as it makes the texture more velvety.

Do you reckon it’s possible to do a low carb/keto version of this using monk fruit or similar?

Avocado choc pudding; technically 5 ingredients but piss easy, very tasty and high protein.

Avocado
coconut cream (liquid not block)
cocao powder/dark chocolate
pinch of salt
sweetener of your choice - agave/honey/maple syrup

blend together and hey presto. Enjoy.

@SpidersAreShitheads I really don’t know! I’ve never used monkfruit so haven’t a clue how that might work. If I were to do it for a low carb meal, I’d probably try erythritol first, as I think that’s closest to sugar. (But I’d probably experiment first just to check).

Yesterday I did yassa marinade: sliced yellow onions + juice of 1 lemon + American mustard.

Added olive oil, maggi liquid seasoning, minced garlic and a whole red chili pepper pricked with a fork. Put beef cheek on top and slow cooked for 9 hours on low. Shredded the meat with forks. Added chopped green olives to serve. Wowsers, it was so so good. I often do chicken this way, but beef is next level.
Can be marinaded overnight and braised on the hob instead.

Oh and slow cooker chocolate fudge: A big bar of semisweet chocolate + roughly the same volume of sweetened condensed milk. Cook on high for 1 hour (or low for 2 hours).
Pour onto paper-lined baking sheet. Smooth out. Chill overnight. Slice with a hot knife. Addictive stuff!

My comfort food is carrot, celery and chicken - all diced about the same size. Brown the chicken lightly, add the carrot and celery, a little water. Simmer until done. A bit before it’s ready, a little slaked cornflour and a squeeze of lemon, some salt. Serve over pasta.

Lay chicken breasts in an oven dish...one per person. Pour over a jar of good quality tomato sauce. Add a splash of water. Cover with foil and bake for about 45 minutes. Remove foil and add a ball of mozzarella sliced. Back in oven uncovered for ten mins to melt the cheese. I serve with spaghetti

Cream cheese frosting: cream cheese + icing sugar + lemon cake flavouring. Good with a pinch of salt on carrot cake or pumpkin bread. Or just on toast. Or by itself :)))
