Help me make yorkshire puddings!

Innittowinnit · 20/04/2025 15:39

I haven’t made yorkshire puddings in years. Sudden urge to make them to go with our Easter roast.

I only have 3 medium eggs. No chance of getting any more.

Does anyone have a recipe (with timings etc please!)?

Any of James Martin's recipes will be fool proof. He's got several and they all work reliably. I use whichever one I find first/appeals most.

105g flour (sieved), 3 eggs, whisk to a smooth paste. Add 150ml milk and a pinch of salt and whisk some more. Put the mixture in a jug in the fridge.

Heat oil in tins in the oven (200 degrees) until very hot. Add the batter. Cook for about 20 minutes. Do not open the oven door while cooking or they’ll flop. Those quantities should make 4 large or 8 small (bun tin sized) puddings.

70g flour, two eggs, 100ml milk. Put flour in bowl. Crack in eggs. Whisk - slowly adding in milk so no lumps. Season with salt pepper and herbs of your choice. If going lamb maybe a bit of rosemary? Put oil in cupcake tray on hot ( 220c), when oil is piping add batter and back in the oven for 20 mins. Bobs your uncle.

Crack the eggs into a mug. See how full the mug is and use the same volume of milk and flour. Whisk the eggs and milk together and add to the flour then mix it all up.

let oil heat up in a muffin tray in an oven at about 220 degrees until it’s “screaming hot” then cook them for about 15 minutes, but keep a careful eye on them. They might need more or less time. Do not open the oven door until they’re done because they’ll drop

The most important bit of Yorkshires is really the recipe, it’s making sure they go into preheated oil that’s really hot, into a hot oven, and you DO NOT OPEN THE OVEN until they’re properly cooked

This is the best method by far. I use water instead of milk (need to be dairy free) and they're so light and fluffy.

The BBC Good Food recipe for Best Yorkshire puddings works for me, just scale it to the number of eggs you've got. I use lard as the oil.

Caspianberg · 20/04/2025 16:00

Mary berry. Uses 3 eggs also

FreiasBathtub · 20/04/2025 16:01

Yep this is how I do it too. For 3 eggs I would do 105g flour, 75ml milk, 75ml water. Plenty of fat, really hot. Cook at 210° (fan oven) for 20 mins. 8 or 9 puddings in a fairy cake tin. They will be puffy!

This is my go to, never fails.

Put on shoes. Grab purse. Go to nearest open shop. Head to the frozen food section. Find bag of Aunt Bessie's Yorkies. Go home. Cook.

Hehe, enjoy your roast!

Eggsboxedandmelting · 20/04/2025 16:03

James Martin recipe.
200g plain flour
3 eggs
300m milk. We always have semi skimmed in..
I even had to open the oven more than once or twice and they were still perfect..

You pinched my recipe!

Use whole milk if poss , then as others have said break eggs into cup then measure out rest of ingredients to same volume , pinch of salt and if you have it a splash of cream ( makes them rise more )

EasterBunnyFeelingFunny · 20/04/2025 16:07

Yes the ratio recipe actually works very well.

Innittowinnit · 20/04/2025 16:16

Thank you all so much! I will report back 😊 kids have never had yorkshires and I‘m anticipating a new favourite! Unfortunately no Aunt Bessies where we live! 😭

We used oat milk, but i add a half teaspoon of being powder as I find otherwise they don't rise. But based on this I might try a version of a trick I use for pancakds and perhaps mix oat milk and soda water.

DinoLil · 20/04/2025 17:38

@InnittowinnitNO AUNT BESSIES???!!!! Wherever you live, I don't want to live there...yorkies, mashed potatoes, roasties, stuffing balls...! 😆

Innittowinnit · 20/04/2025 18:04

They were a teeny bit eggy and stuck to my ancient muffin tin, but were a big hit with DC!

Help me make yorkshire puddings!
