I'm not a vegetarian but prefer veggie food.

Unfortunately over the past 6 months it's become clear that pulses, nuts and onions cause me digestive issues. Even soy sauce is now an issue. So are tinned tomatoes.

It wipes out most of my favourite foods.
What veggie meals can I have that avoid pulses, lentils, nuts and onions (and garlic, leeks etc).

Also, and I know this is probably criminal, am not really a fan of cheese. It works in mash but otherwise nope.

Vegetarian sausages and mash, or toad in the hole.
Omelettes
Risotto?
Pasta primavera, or carbonara, or creamy mushroom sauce, or sardines/tuna if you eat fish

Parboil chunks of pumpkin or sweet potato. Slice.

Make an Italian tomato sauce.

Put together as a lasagna. Top with breadcrumbs and crumbled Greek feta if you like (sheep or goats milk may work ok for you).

Brown in the oven.

This is for two people. A punnet of cherry tomatoes halved with salt (v important) in a glass dish, add a couple of blobs of pesto, a bit of olive oil and some balsamic vinegar and cook in a hot oven for 20 minutes at 200 degrees. Then whizz in a food processor or mash with a fork. This makes a great pasta sauce. That's the basic version, but you can add other veg that will roast down with the tomatoes as you like or, if you want to try it, add a couple of blobs of a creamy cheese to make it into a creamier (but not cheesier) sauce - feta works well. Add over pasta. Genuinely great (and easy).

Substitution is your friend - be creative!

If dish calls for pulses or lentils, try roasted butternut squash or beetroot, or chickpeas.

Instead of nuts, try sunflower, seeds, pumpkin seeds, chia or flaxseed.

You might consider using various herbs - especially chives or parsley - or cut up lemons instead of onions.

Look at each recipe and think outside the box.
