Veggie option with dauphinoise

We're having slow roast lamb and dauphinoise potatoes on Sunday - can anyone recommend a veggie option for dd and sil? They eat fish but I'm thinking that won't go together well. Happy to make something not too long winded as lots of guests to feed on Saturday too) or buy something yum. Thank you!

I think salmon or trout would go really well with it or a mushroom tart would be yummy.

Salmon en croute would be celebratory and go well with dauphinois potatoes. Have a look at M&S, comes in packs of two, easy to oven cook, or works well in the air fryer too.

I think a nice piece of poached salmon would be lovely with dauphinoise potatoes along with some spring veg. If you really don’t want to serve fish you could do a mushroom wellington. You can make it ahead of time and then just take it out of the fridge when you need to cook it.

I would say Salmon as well
Last Sunday me and DS had Dauphinoise, green veg and lamb while DH had Salmon en croute

Thanks - unfortunately salmon is the one fish I know dd's other half doesn't like. Which is a pity as whole sides are £12.50 in Sainsbury's.

Something fun with mushrooms then - I put pastry on my Tesco order in case.

I like it with either nut roast or a very simple lentil dish which I make by braising carrots, onions and puy lentils in red wine with thyme and a stock cube.

@CrazylazyJane I'm making a long roll of that or my own similar version for Saturday's entertaining - Greek theme. My brain is obviously not on full speed. I can obviously just leave some for Sunday!! One of my favourites!

Would have been so much easier if the veggies were here for Saturday's mezze/Greek food! I'm sure they'll be happy with leftovers - lots of yum side dishes on Sunday.

Could you make an extra separate portion of dauphinois and layer vegetables through it? Leek and mushroom are delicious with it.

@RemusLupinsBiggestGroupie you're probably right. They're staying over so I'm sure all the kids will do the usual raid the leftovers from the fridge at some point. Left over spanakopita won't go to waste in this house 😊

Also, you could make (or buy) Greek Spanakopita. Sainburys do a sort of Spanakopita parcel or here is a recipe to make one.

I was gonna come on here to say this! It's such a lovely dish, watch out the meat eaters don't steal most of it!

You could just assemble two dishes of it as you go, popping the veg in one. I’d add a good layer of grilled cheese on top for a protein boost.

I think if finely cut there’s no need but I tend to like to sauté mushrooms as it just gets a slightly sweeter flavour so I’d maybe cut them a bit thicker and add once sautéed. I think leeks are ok finely cut. My mum often does that and they come out alright but hers is more as a sort of garnish through it, so I’d be wary of too much water coming out if you really add lots.
