Depends how coconutty you want it.

What's it for? If it's for a stir fry then just add as much as you want for the taste.

here it says 3 tablespoons powder to 1 cup water (250ml)

so a 'can' would be about 5 tablepsoons in 400ml water

how's that?

oh that's a shame - it will be too many. will try it using half a "can" and see if it tastes ok.

What are you making?

You could buy the coconut block, it seperates in the packaging, with the oil going to the top and solidifying, so you could buy that, break off the oil and chuck it, and just use the cocnut left, will have fewercalories and obviously no fat.

this:

  • 3/4 cup lite coconut milk
  • 2 tbsp reduced fat peanut butter
  • 2 tsp splenda
  • 2 tsp fish sauce
  • 1 tbsp freshly grated ginger
  • 3/4 pound prawns
  • 1 cup baby spinach, roughly chopped
  • 2 cups cooked whole grain rice
  • 1 red pepper, chopped

Whisk coconut milk, peanut butter, splenda, fish sauce and ginger together in a small bowl. Coat a nonstick skillet with] frylight. Heat skillet on medium. Add prawns and cook for 2 minutes, until they begin to turn pink.

Scatter chopped spinach and pepper ; pour coconut milk into skillet. Cook for 2 minutes until thick and bubbly. Serve immediately with hot whole grain rice.

give up trying to make a fatty thai curry low fat and do one with rice wine, soy, ginger and a teeny bit of honey instead?

Your recipe sounds good, but as Mrs Badger said just make your own one, I'd ditch the peanut butter for a start, and just use soy sauce, rice wine, ginger, garlic, chillies, coriander and a few teaspoons of the coconut powder instead. Will be much nicer anyway!
