Bored coeliac. Anybody got any interesting but straightforward polenta/ground almond/gram flour recipes, please?

I keep all three in stock but only have a recipe or two for each on my regular rota.

I need inspiration. I’ll eat most things apart from offal and olives. Extra points if it’s suitable for batch cooking and freezing.

Chickpea flour flat breads:
mix 80g chickpea flour with 125g water, some salt pepper and cumin (and any other flavours you fancy) and about a teaspoon of olive oil. Heat up a frying pan. Pour in batter - you can make them whatever size you like. I usually go for small ‘pancake’ sized ones. But you can make larger ones more akin to a wrap if you prefer. Cook on both sides until golden.

Deicious as a base for eg hummus and roast veg, or to dip in soup or as a wrap.

I was going to suggest a similar gram flour pancake - we make our version as a sort of sweet corn fritter and add a bit of smoked paprika.

If you’re open to sweet recipes, this super easy gingerbread recipe uses gram flour along with rice flour.

Gingerbread -

  • 225g rice flour (plus extra for dusting the work top)
  • 125g gram flour
  • 1 tsp xanthan gum
  • 4 tsp ground ginger
  • 2 tsp ground cinnamon
  • 1tsp bicarbonate of soda
  • 100g butter
  • 175g dark soft brown sugar
  • 4 tbsp golden syrup
  • 1 egg

Method
STEP 1
In a food processor combine the flours, xanthan gum, spices and bicarbonate of soda. Whizz the ingredients to mix them thoroughly. Add the butter and process again till the mixture resembles breadcrumbs. Add the sugar and process again.
STEP 2
Add the golden syrup and egg and process until the mixture starts to come together. Tip out onto a (rice) floured surface and form the dough into a smooth ball. Wrap in cling film and chill in the fridge for 20 minutes.
STEP 3
Take out the fridge and roll to the thickness of a £1 coin. Use a gingerbread man cutter (or any cutter you like) and cut out as many shapes as you can, re-rolling the left overs to use it all up.
STEP 4
Heat the oven to 180C/160C fan. Line a baking sheet with non stick baking parchment and bake the cookies for approx 12 minutes until nicely browned but not burnt. Leave to cool on the tray for 5 mins then transfer to a wire rack to cool completely.

You can bake the polenta in the oven to make it go kind of hard, then once it's cooled you can slice it. Then fry it in a hot pan or griddle.
I like to serve a couple of slices of that with a mushroom and cream sauce. Ideally a few different types of mushroom, garlic, cream, bit of white wine and seasoning, some fresh oregano or parsley/basil.
You could add ham, cooked bacon or cheese as well?
The cooled polenta block keeps ok for a few days in the fridge or you can freeze it in slices.
You can sometimes buy the block ready to fry/grill.

Another thing I love is Thai style pork mince. Stir fried with garlic, ginger, lemongrass, Thai basil, coriander, chilli, lemon, fish sauce, tiny bit of sugar and some nice greens. I add water or wine and a bit of watered down cornflour to slightly thicken. That's nice served with rice or vermicelli noodles.
