Flatbread/tortillas made on the crepe maker - How to keep soft/foldable?

I read the huge list of ingredients and additives on the tortilla packet and decided I would try my own, so as to be less UPF.
I’ve tried a couple of recipes so far, but not had much success keeping the finished product soft and foldable, they have cracked on folding.
What am I doing wrong? Any ideas, please?

I put them under a teatowel as soon as they come out of the pan and keep them covered as people take one to eat then they stay soft but it only works if you cook and eat them at the same meal, no use for packed lunches etc.

It's the additives that make them foldable I think - 'real' tortillas are served straight off the griddle and can be folded when hot but once they cool down they will break if you bend them. Something more like naan might be better?

Crosta Mollica flatbreads don't have huge ingredients lists, they are ££ though.

If I am making my own, I use a recipe with plain yogurt and cook in a frying pan. I flavour with herbs / spices depending what we are eating, they're delicious.

ETA - the yoghurt flatbreads are bendy / wrap-able!

could a very slightly damp teacloth one underneath, with one on top work and putting each tortilla in between the 2?

eta; using plain flour is better.

Thank you very much everyone for your suggestions. I will try the yogurt recipe and also do the tea towel thing.🙏
I hadn't thought of naan bread, so I'll give that a go, too… 😀
