so now the weather is nicer, i want to be eating lighter, non starchy foods. Apart from salad, what are you cooking for tea?

I am vegetarian and ds (2) cant have dairy, soya or egg so we are quite restricted! I do cook 2 dishes most of the time (one for me, one with meat) but we generally all eat the same thing.

Please share!

Cold bean/pea lentil salads and new pots

Make a 'meatloaf' with mashed chickpeas and butterbeans, breadcrumbs, tomatoes, nutritional yeast and other grated veggies with some chickpea flour potato flour to bind. Bake and serve slices cold with salad or warm with cooked veggies.

lol, I'm not amazing in the kitchen at all but they are all easy to prepare.

Pierce aubergine and bung in reasonably hot oven until it is a bit squishy and the skin peels off easily.

peel skin, put aubergine in food processor with some tahini, roasted and crushed cumin seeds, garlic, lemon juice and whizz.

I don't use tahini.

Tuscan beans w/ tomatoes and sage

1 cup shelled fava beans
oil
2 cloves garlic
1 14oz can toms
1 14 oz can cannellinin beans
½ tsp dried sage

? Blanch beans for 3 mins
? Rinse under cold water. Peel
? Fry garlic on low heat 2 mins
? Add tomatoes, beans abd sage, Cook for 10 mins. Stir in fava beans cook for 10 mins
? Season
? Serve w/ sourdough bread

Mexican lasagne

Serves 4-ish

2+ large flour tortillas
1 big pot plain yoghurt or sour cream (you can leave this out)
1 tin sweetcorn
1 onion
Other veg, e.g. red/ yellow peppers, courgettes (anything will do)
Chili powder/ 1 red chili
1 large can tomatoes (maybe 2 small ones, or you might get away with one - you'd have to see)

1 quantity refried beans (either 2 tins pre-made or use attached recipe ? v easy to make, but takes bit of time& less spicy than the tinned stuff, which is perfectly good.)

? Fry onion, 'til soft.
? Add other veg. e.g., peppers, courgettes & chili, if used
? When soft, add tomatoes & chili powder if used and cook for a while until it looks a bit like ratatouille

? Once the sauce is made, put about 1/2 in bottom of lasagna dish.
? Add 1/2 refried beans and spread
? Cover with a tortilla ? tear & rearrange to make fit
? Cover with some yoghurt.
? Add the rest of the tomato sauce, then another tortilla.
? Cover with yoghurt and sprinkle cheese over the top.

Bake in oven (180 degrees) for 30-ish minutes-is, until bubbly.

The yoghurt sets o bit, but is good & the tortillas go a bit crispy on the top.

Mexican Lasagne

10 oz can enchilada sauce
14.5 oz can tomatoes
6oz can tomato paste
16oz can black beans
9 sheets lasagna
2C cottage Cheese
3C shredded cheese

? Preheat oven to 375/ 180
? Combine enchilada sauce, tomatoes, paste. Mix well.
? Add black beans

? Build from bottom:

? 1/3 sauce
? 1c cottage cheese
? 1cheddar

? Cover with foil

Bake 45 ? 50 mins.

Cool for 5 mins
