Alternative to eggs?

I am a lifelong vegetarian. I used to eat a lot of quiche, omelette, poached egg, scrambled egg, souffle, frittata. I have now been 'off eggs' for more than 2 years. I have tried a few times, but can't face them and I think this is permanent. I can still eat cake sometimes!

Does anyone have any bright ideas what I can eat to fill this gap? I'm having far too much cheese on toast.

This is a marvellous alternative to quiche. I detest it hot but it’s delicious cold. I reduce the cheese massively and put nutritional yeast in it to keep the cheesy taste but lower calories/fat. I also sprinkle mixed dried herbs in the onions when softening, because that’s what I would do when making quiche. There are some amazing veggie recipes on TT.

I've also gone off eggs as I got older, but there's no single food I replaced them with. I rarely eat cheese. With toast I typically have beans, spaghetti, peanut butter, jam.

Tofu scramble if you like tofu but really, nothing is going to replace both the taste and texture of an omelette or scrambled egg.

Maybe try a few weeks of Gousto or similar to break you out of a rut and give you more ideas?

Houmous on toast is lovely. Can add olives, sun-dried tomatoes, that kind of thing.
I also love coleslaw on toast.
Both of the above really benefit from proper salted butter underneath.

Also peanut butter on toast with sliced pear on top. I often eat this for lunch 😁

Have you tried tofu scramble? You can buy it already done and just cook it, or make your own with standard tofu. It works on toast, but i like it made into a burrito wrap type vibe by adding kidney beans/black beans etc.

I knew what this going to be before I clicked it! I made this for the first time for vegetarian ds the other day and he loved it.

Are you looking to replace for protein? And can you eat them in things like muffins or pancakes?

I think you probalby need to embrace beans/lentils/other pulses? Increase your reliance on chickpeas - the water works as an egg replacement in baking if you're also needing that.

Are you also thinking about the sort of things that are easier to make in advance? I have once or twice done that thing where you take a round loaf of bread and pack it with grilled vegetables and mozzarella. I used a Jamie Oliver version. DH loved it as he'd take a couple of slices to work as a sort of cold pie.

This is good to know! I absolutely love it with sliced apple but have never tried pear.
