I know it seem an easy thing to make but only just really getting into this cooking from scratch!
Got some salmon fillets today and was thinking of doing them for tea for ds1 ( 5 years) and ds2 ( 9 months) - so how do i do it!
TIA

Do they have to be nuggets? Couldn't you just poach the fillets?

AitchTwoCiao · 13/05/2008 12:02

are they big thick salmon fillets with the skin on?

Pinkranger · 13/05/2008 12:05

I nornally do poach the fish but ds2 is steering away from anything that involves a spoon! so trying to do something that he could hold and do himself,
They are thick with skin x

honestly, i think it's pretty difficult to make nice breaded pieces from thick fish. dd used to feed herself the thick flakes of salmon when she was a very small baby, i think salmon's great for finger food, personally. don't mash it, just steam or poach and let it come apart in flakes.

Thanks Aitch, will give it a go, ds1 was spoon feed all the way ( he was lazy, i was a worried 1st time mum!) So am a little unsure how to go on with ds2!
Will let you know how he goes!

good luck! the more practice he gets, the better he'll become as well.
and don't forget the blessed fish finger. so handy for a quick lunch, no artificial colourings in the birds eye ones and easy peasy finger food.
althoug if you're raising a fish-head you may find yourself in the situation of watching your child maul your delicious arbroath smokie while you are left with their fish fingers from under the grill... so beware!

You could do nuggets or goujons with salmon. Just cut the fillet in half, then cut into thin slices. Get three bowls ready, one with a couple of spoons of plain flour in, one with a beaten egg in and one with breadcrumbs (I think brown bread is best for this). I also add chopped parsley to breadcrumbs.
Take each slice of fish, cover with flour, dip in egg and then into breadcrumbs. You only need to fry for a minute or two on each side if cut thin.
My kids love them! But they also love fish fingers too

he's a fishhead. dd ate a whole poached trout fillet (leftover from last night's tea when all she wanted to do was sleeeeeeeep and couldn't face eating) while watching cbeebies this morning. how's that for a 'healthy mid-morning snack', annabel karmel?

AitchTwoCiao · 16/05/2008 21:46

actually, what am i saying 'poached' - that makes it sound fancy.

what i mean is the super-quick meal of getting one of those frozen fillets out of the freezer, jagging a hole in each end of the plastic wrapper and zapping for on min then rest (do peas then) and then another min in a covered bowl in the micro.

yes, it's probably not brilliant to zap with the wrapper on but i HATE the smell of fish in my kitchen and if you do a baked potato in there first (mash it when it's cooked) and some frozen peas it's an entire meal in about five mins that no-one could argue with from a nutritional perspective. perfect for when you and dh have ordered a curry.

Easier still to steam fish in a bamboo basket over a pan of boiling water.
