Cheap, easy fillings for veggie sausage rolls

The time has rolled around to seek suggestions for the annual community event that has previously involved filled roll fillings and budget bakes on this page.

Tuck shop went well last year but many fundraising stalls are pumping out great cakes and tray bakes, while there is a dearth of savoury options, so I'm thinking of bunging stuff in shop bought puff pastry.

But what can be scaled up easily and cost effectively? Linda McCartney sausages are easy but are they cost effective?

Any thoughts on what the public will pay gratefully accepted. Not going to this effort for 50p a go.

I'd avoid any kind of 'fake meat' and go with a veg based filling. These Sweet potato and caramelised onion rolls are good, just make sure your filling isn't too wet.
I wonder if a cheese straw might be more popular than a veggie sausage rolls (some meat eaters write off the veggie version of a traditionally meat based snack). Cheese straws don't have that problem.

Glamorgan sausage rolls. Basically mashed potato, grated onion so no chunks and grated cheese. I'm not a veggie but I love these.

Both good ideas, thanks. Interesting about the cheese straws as I got the idea to do sausage rolls from doing activity themed cheese puff pastry shapes.

Veggie haggis sausage rolls, so so good. I made them at Christmas when we had loads of visitors and people are still talking about them. My 4 yo nephew was very keen and ran over to give me two thumbs up. The haggis goes a long way so I'd consider them cost effective, but like, maybe not as cost effective as just vegetables. You could go down the road of making your own veggie haggis to save money.

(I am Scottish for full transparency haha)

Used the chilled haggis. Also had some form of chutney spread lightly down in a line below the haggis to add a tang flavour. There was an online recipe but my internet signal is so bad only Mumsnet seems to load for me! But pretty straightforward. Think I broke up the haggis and fried some onion and garlic then added the haggis to that to soften it up, then put that onto the pastry. That way your haggis will go further too!

Tinned marrowfat / mushy peas! Sounds weird I know but these are absolutely delicious, and cheap. They can easily be made vegan if that’s useful too.

No recipe but you could cobble something together with black beans, onion , tomato and garlic, I imagine.

Zucchini slice. Leave out the bacon for vegetarian. Mix it up, stuff your pastry and bung it in the oven.

Delia's vegetarian sausage rolls are amazing! Cheese, breadcrums, onion, herbs and a tiny bit of cream.

I agree about Delia's sausage rolls. They are gorgeous.

I once made vegetarian haggis using this recipe: https://thepeskyvegan.com/recipes/vegan-haggis/

I can't remember how long it took, but what I do remember is (a) it was good (or I wouldn't have kept the link) and (b) it made a large quantity and some ended up in the freezer, where it kept well. So might be a good choice for a savoury or pasty filling if you have the time to make it.

Samosas are lovely and I actually prefer the veggie ones to ones with meat.

Frozen spinach and cottage cheese is lovely. If you’re feeling fancy fry up an onion and garlic first, and bung in a bit of nutmeg.
