How stop cheese from getting mouldy

Fancied some cheese n biscuits tonight. Had some Cathedral City dated in a months time opened (a third eaten) and covered with mould. I had the pack sealed with a clip on the top

Did you touch the cheese itself with your fingers when cutting/grating? I find that if someone touches a block of cheese (looking at you DH) then the cheese gets bacteria on it and goes mouldy, even with clean hands.......

Just scrape the mould/bloom off and crack on. Cheese naturally wants to make a coating.

Also waxed paper/something breathable is better than totally sealing in as it does give off moisture

Mould was caked on all sides. If on a small area, I trim the mouldy bits off

How odd. I've never had cheese go mouldy, whether or not it has been touched. I didn't think it was possible unless it was months out of date maybe.

Yes, I find this with my DH. I always ask him to wash his hands before he grates cheese now.

I think you might have a dud batch. I have never seen in date cheese that has been wrapped and in the fridge go mouldy on all sides.

Different brands vary, I find Waitrose Red Leicester lasts longer than Tesco Red Leicester, Waitrose no 1 Cornish quartz cheddar lasts ages though is quite hard.

I’ve never had cheese go mouldy like that. Either it was a dodgy bit of cheese or there are a load of mould spores in your fridge somewhere and the cheese was just in the wrong place at the wrong time.

I've never had this happen. Is your fridge cold enough? Otherwise, I grate or slice and freeze if I feel it's going to be wasted.

Don't store it in the original bag once its been opened - it'll sweat and thats what will cause mould.

Put it in a tub or butter dish or something with a bit of space around it, or wrap it in beeswax or paper.

I've never bothered covering my hands or avoiding touching cheese to cut or grate it and don't know anyone who has!

If I buy larger quantities or I have some cheese opened that I know I will not eat soon, I freeze it. It works very well!
