Toad in the hole. Did I do it wrong?

I’m not British, nor do I live in the UK, but I love making Yorkshire puddings. Tonight, I had some decent sausages that needed to be used up so figured I’d try road in the hole.

Bear in mind, I’ve never seen or tasted one before.

It came out looking pretty good and tasted really nice, but I don’t know if I got the texture right. I was expecting crispy Yorkshire pudding sound the sausages, but instead the batter towards the middle kind of turned into a set savoury almost custard. A bit like clafoutis, but not sweet. It was cooked through so not raw or liquidy.
The sides were crisper, and more like yorkies.

It was delicious, but just wondering if I did it wrong or is the batter meant to be less solid in the middle?

Toad in the hole. Did I do it wrong?

Yes, that's a typical Toad in the Hole, quite stodgy in the centre, and crispy around the edges. If you add an extra egg to your batter mixture, it will rise more, to give you a more crispy result.

Ok, looks like I got it right so! Thanks all.

Also, what do people eat with it? We had gravy and peas. My husband was saying he thought some mash would be needed but it was stodgy (that’s the word I was searching for, @AdaColeman!) enough without.

Perfect! The soggy but is my favourite personally.

However…If you use less batter or a larger tin, it will be less soggy in the middle, especially if the fat in the dish is very hot and the oven also very hot.

Looks perfect to me. I don’t eat meat so I do mine with roasted veg rather than sausages.

That looks delicious 😋 I can’t advise as it’s decades since I made either Yorkshire puddings or Toad in the Hole, lived in a hot country and basically forgot about it🤦‍♀️

It's only the individual ones that are like that - a proper dish of it is supposed to be a combination.

Add lots of veg to it for the contrast in textures - at least one cabbagey one (kale/sprouts/savoy/red), one green (peas/beans) and one yellow or orange (carrots/swede). Some steamed courgette sticks are also really nice with it.

And of course, you need a huge amount of well cooked onions in the gravy. Adding chopped sage and thyme to them makes it even better than it is already.

Have a really hot dish with dripping in before you add the batter and it will be crispy underneath and less stodgy. I love toad in the hole. With mash, peas and lots of gravy.
