I am looking for an easy and reliable recipe for a cupcake recipe please. I’d like a good-sized cupcake rather than like those tiny flat ones you can get in the supermarkets.

I’d like it maybe in vanilla, plain or lemon flavours too.

I always do 4oz each of butter, flour, sugar and 2 eggs. Cream butter and sugar, mix in flour, add eggs. Drop of vanilla if wished. 18-20ish depending on oven. This is the recipe my grandmother and mother used, and I've always found it reliable.

For any basic cake, start by deciding how many eggs. A 2 egg cake serves 4 people so scale up as needed.

The weigh the eggs (in shell) and that weight is your magic number.

Weigh out magic number in butter, sugar and self raising flour. Add the eggs and flavours (vanilla or lemon etc) and an extra teaspoon of baking powder and a tablespoon of milk per egg.

Mix it all well with an electric beater and put in the oven.

It is v reliable because it doesn't matter if your eggs are big or small.

Are they not still fairy cakes? Using standard cane cases. Cupcakes are bigger, using muffin cases?

Yes just throw it all in a mixer! Just add eggs slowly so it doesn't curdle...not that they come out any different if it does

Yep. As above - weigh your 2 eggs and use that as the same weight for butter, flour and sugar. Add a drop of vanilla extract, teaspoon baking powder and splash of milk.

Yes, the ‘all in one’ method posted by @parietal just upthread. Your butter needs to be very soft (or use Stork baking spread from the tub) and you need the extra bit of baking powder to help the rise.

I do cupcakes at 160⁰C fan oven for around 18-20 minutes.

Basically you need the same weight of eggs, flour, sugar and butter/baking spread so weigh the eggs in their shells and match the other ingredients to that weight. I add some vanilla and maybe a teaspoon of baking powder too

180°C/fan 160°C/350°F/gas mark 4 for about 20 mins til risen and golden.

Mary Berry and BBC have good recipes to help you decide what sort of buttercream flavour you want to top them with.

I always make fairy cakes/cupcakes/basic sponge cakes using the all in one method.

Remember to preheat your oven.

I’m making some for DS(9) birthday so I don’t suppose anyone would know if I could just add a drop or two of green food colouring to a Betty Crocker buttercream tub? Or would it affect the consistency etc too much? I’ve bought Minecraft cupcake toppers so I was thinking of having green icing.

All in one work fine - I always soften the butter in the microwave low setting for 30 sec

I bake at 160 fan for 15 minutes for a small cake and longer if bigger.

Do double layer cupcake cases if you have the flimsy paper ones.

If using a metal tin, always line the bottom with baking parchment first.

Green icing will work if you get a strong intense colour,

I was thinking the exact same thing as I opened this thread! And also wondering what happened to the Lyons cupcakes you used to be able to buy. They came in chocolate, orange and lemon flavours, with a thick flat disc of firm icing on top😋

Make sure you use gel food colouring not the liquid one.

I think the Fiona Cairn cupcakes from Waitrose are as close as you can get, but they are an expensive alternative.

Trying to get the silver paper off without breaking the icing is one of my abiding childhood memories.
