Making roasted veg more interesting - any suggestions?

We love a big sheet pan of roasted winter root veg in this house as a side dish, but after having it once or twice for a few months, it's getting a little boring.

What do you all do with roast veg? Looking for ideas to jazz it up a little please!

Different flavours as a start - harissa one day, garlic and chilli another etc?

Chop the veggies up and turn into a chunky warm salsa with sherry vinegar, olive oil and salt.

Different roasted veg for different flavours?

Root veg/green veg with a lemon/honey/garlic dressing.

whole garlic cloves, fresh rosemary and thyme

harissa or ras el hanout, honey, pine nuts

smoked paprika, garlic granules and sliced lemon

sea salt, cumin, fennel and caraway seeds, tossed in virgin olive oil

mild madras spices mixed to a paste with a bit of oil, water, salt and brown sugar. Toss veg in it and add chick peas for a fragrant dry curry.

-Change the veg around- rather than root type roast veg, go Mediterranean. Peppers, courgette, aubergine, baby tomatoes, olives, garlic and baby potatoes with italian type herbs.

-Buy different veg to try. Beetroot can be baked, jerusalem artichokes, celeriac, sweet potato, kohl rabi etc

-Roast cauliflower florets till just browning and soft. Mash. It makes a nutty, lower carb mash

-Left over roast veg goes well in a frittata. Basically, just add eggs and a bit of milk or cream and/or cheese on top and bake till set.

-Leftovers can also be made into a bubble and squeak then crumbed and baked or fried. Lovely for a boiled egg on top.

There's not one of these I wouldn't eat, sadly DH has a few dislikes amongst them. However, we've agreed on a few and last night had feta, sundried tomatoes and olives added alongside thyme, and it was gobbled up.
