If you are gluten free and you DON'T eat GF bread, what do you have instead?

I've been GF for many years.

GF bread makes me bloated and gassy. It's probably UPF and just not very good for anyone tbh.

I don't have a sweet tooth, and I haven't found a good, quick, healthy alternative for avo or eggs on toast for breakfast. What do you have instead of bread?

We make our own bread in a bread maker but for breakfast mainly overnight oats

I sometimes have pancakes with avocado and poached eggs - much nicer than GF bread. Also hash browns (although not very healthy) or courgette and halloumi fritters for a healthier option. Another breakfast I do is oat and cottage cheese pancakes but usually make that sweeter and have with berries and maple syrup

Soft boiled eggs with Asparagus, butter and sea salt. Add an ice cold glass of fresh orange juice with bits.

Poached eggs, Hollandaise, wilted spinach.

Slice of ham, Hollandaise, melted cheese, poached eggs.

Are you using regular GF flour for pancakes and soda bread? Or anther naturally GF flour like chickpea or something?

Is general consensus that it's the xantham gum in GF bread rather than the flour that makes it hard to digest?

Would love some recipes if anyone has a good one to share.

Pancakes, oatcakes, waffles, fritters and hashbrowns all good ideas. I love all of them.

I just use cornflour in place of normal flour when making pancakes. Equal parts cornflour eggs and milk. I use oat milk for mine. They come out lovely

I like the M&S or Waitrose crackers with Gouda.

If I don't have any handy carb I sometimes have a handful of cashers.

The only decent GF bread I've found is Amisa.

For me, psyllium was a problem at first as it's very fibrous, but I acclimatised.

No personal experience myself, but someone at work said that compressed wood shavings are Gluten Free and are slightly more tasty than most GF products. 🤞

It’s the pea protein in GF bread that some people find hard to digest, I think.

I like potato cakes, made with potatoes and a GF flour like corn flour or Dove, with a bit of milk, butter, maybe an egg.

I also make cornbread sometimes.

Apparently you can toast slices of sweet potato, not sure I'd do it in the toaster though.

My DM, DSis and one of my DC are GF, big fluffy pancakes go down well.
GF flour mixed with buckwheat or GF flour mixed with gram flour are faves.
Chestnut flour in small quantities is great in a mix because it is sticky.

I am not gluten free, but wouldn't jook, AKA congee (rice porridge) be OK? I remember DH having it for breakfast on holiday in Thailand and it was very good.

Leftover rice with a fried egg, hot sauce, and some avocado if I'm feeling fancy. Or egg fried rice with mushrooms.

I do have a sweet tooth so, alternatively, homemade granola or gluten-free steel cut oats with brown sugar and raisins.

People I work with have fried/ grilled plantain, I’ve been meaning to try although I’m not gf, it sounds really good
