Best way to freeze fresh ginger please?

Haven't bought fresh ginger for years as DH claimed not to like it. Has changed his mind since having a gorgeous meal at friends which included ginger.
I do remember last time sticking the whole thing in a bag in the freezer but finding it hard to cut a piece off a peel it.

Is it best frozen whole? Or can I cut it into chunks? Peeled or unpeeled.

I peel it and finely chop it before freezing. Or you can mix with water and freeze as ice cubes.

You can just freeze it whole, it defrosts pretty quickly or use it frozen.
I peel it first though

I freeze it whole and grate however much I need from frozen, which is actually much easier than grating it raw. Obviously doesn't work if you need chunks or slices.

If you're using it in sauce meals like curry, buy ready frozen ginger, much easier and works out loads cheaper than fresh. Then just defrost a cube in the microwave or room temperature for an hour or two.

Thank you . I just remember it being difficult to peel when frozen? Also does tbe bit you hold in your hand not defrost while you are grating it?

I cut it into chunks, don't peel. It is quick to grate when frozen.

I scrape off the peel with a teaspoon and it's just as easy when it's frozen. It doesn't thaw out all that much so I just refreeze.

Fresh ginger keeps for weeks. I find it impossible to grate from frozen.

I mainly use it grated so I peel it and freeze whole and grate frozen as needed.

If you need it in chunks, peel and cut to thumb sized pieces before freezing.

I use lazy ginger in a jar quite often or fresh seems to last OK in my veg drawer for ages! I just grate it as needed from the fridge.

I grow ginger and once washed off, I chop into 4-5cm chunks and freeze in a zip up freezer bag. Sometimes, when its defrosted, parts can be soggy or what I assume it freezer burn and dried out, so I always freeze slightly larger chunks than I'll need. I cut any soggy/dry sections off. As someone else said, use the back of a teaspoon to scrape the skin off.

This is what I do. When I can be bothered I grate ginger and garlic and freeze mixed together in ice cube trays. But practically I just grate frozen ginger (microplane) and grate a garlic clove.

It keeps very well just sitting on some damp (not soggy wet) soil. I imagine you could use a damp folded flannel or even kitchen towel, though that might dry out quickly. Kept like this it plumps up nicely too.

I peel it and put it in a blender with some oil then into the trays.
You know the inserts for chocolate boxes? It’s perfect for storing in the freezer. A blob in every cell,in the freezer then pop it out as/when needed. Same with garlic.
