Hi
Asking for another component for a dinner please.
I have cold potato salad ( it's hot here) crumbed lamb cutlets and need a green ( I love peas but they are getting boring and I don't want to faff around after crumbing the cutlets.Carrots and brocolli are all I can think of (I;m doing my weekly shopping list.)
Fried rice with egg and chinese hoisin pork is dinner 2
3 is chinese crunchy noodle salad ( the one with wombok) and satay skewers and Jasmine rice with some veg cooked through it.
I have a lamb roast so we will have to have that but I'll turn up the air con and you can't go wrong. Friday is takeaway.
Another question
What do people buy for their husbands to take to work ( or what do their husbands buy themselves) ? He's happy to make it him self but I think there's only so many ham and cheese rolls you can eat in a week. He's not a fan of fruit. There's no microwave or fridge so it has to be kept cool in a chiller bag, If he doesn't pack something he buys something which is very exxy where we live.
Ideas would be appreciated.
Whilst I'm at it breakfast ideas for a 12 yo ( who could do with losing some weight), He only likes toast ( peanut butter or nutella ) or raisin toast. And milo, which I am going to restrict to a holiday treat.

We often have broad beans with lamb, this is a nice salad aforkandapencil.com/recipe/broad-bean-salad-with-mint-feta-and-lemon-oil Alternatively, you could do runner beans or courgette.

Have you asked your husband what he’d like for lunch? Maybe he’s happy with a ham and cheese sandwich!

Theres loads of inspo on lunchbox ideas. Stuff like crustless quiches, wraps, tortillas, salads with protein and dressing.

I’m not a big fan of fruit, but I do eat a lot of veg by way of compensation.

If money is an issue, then maybe agree that he can buy lunch at work once a week?

Sadly I am the only person who will eat any kind of bean or courgette/zucchini. Not happy!

DH has has 2 cheese and ham sandwiches for lunch every work day since I've know him - probably longer! And a bag of crisps an apple. Boring but he likes it.

I think is what I'm going to, maybe through in a lettuce cheese and roast beef once in a while. Glad yours eats the apple. Mine occasionally does but grumbles. I do swap the crisps for those bagged pretzels sometimes trying to pretend it's healthier. I will have a crack at a wrap though. I can get edamame beans but he'd never eat them. Same with a well-dressed salad. It would be returned . He's happy to make his own lunch it;s just a bit of variety would be nice!

With lamb, I’d go traditional green veg like French beans or sautéed kale or for summer, I’d do a Middle Eastern style salad.

I don’t really buy dh anything for lunches. He’s on his own for sorting his food out. 😂 But I’d say most of the time he eats noodles in miso broth and adds whatever veg we have floating around (super easy, it’s just microwaveable noodles, then boil the kettle and add miso paste). Or he has leftovers from whatever we had for dinner the night before. Or he’ll make himself a sandwich.

No help on breakfast really as my 12 year old mostly eats pain au chocolat or cinnamon raisin bagels or she’ll make herself scrambled eggs with toast.

Can swap the filling stuff to what you have in. Make a tray and freeze them then nuke 1 or 2 for a couple of minutes when you want them.

Vietnamese spring rolls - really refreshing, tasty, healthy. Good for lunch or dinner.
Roast broccoli with lemon, salt and pepper. Really nice hot or cold.
Can you encourage your son to eat other stuff on his toast? Eggs? Avocado? Yoghurt with a bit of honey and fruit?

Does your DH actually want variety? My Dad had cheese and pickle sandwiches and a chocolate biscuit bar for lunch every day for decades and was happy. (I couldn’t do do that, but I eat a lot more stuff than your DH!)

No microwave , no kettle. He's a tradie just moving from place to place.
He love the roast beef roll with pickles and jarslberg yesterday. I'm out of rolls thoughnow!!!

1 - green veg suggestions skinny/dwarf green beans, very quick fresh or frozen. Or chop up and fry courgettes, very fast.

2 - husband lunch - make big batch of couscous with chopped up veg/meat in it. You can have it for dinner night before then have portion or two leftover to eat cold next day. (or reheat in microwave, either is fine).

3 - 12yo breakfast - bagel thins? less stodgy than full size ones but seem filling enough to me
