Cake or brownie or blondie recipes involving coconut milk?

Ive found a few but they seem to be vegan and also dont use a whole can, so not quite right, I dont want eggless or flax seed type cakes/brownies, just a bog standard reliable recipe that uses a can of coconut milk if possible

Brownies tend to be dairy free though (I mean I've seen maybe two exceptions ever) so why would they need any type of milk? If you're trying to make coconut flavoured ones, maybe dessicated coconut is a better shout? Or if you're trying to use up a tin of coconut milk, I heartily recommend Thai green curry. ETA: Ooh or coconut milk ice cream if you've an ice cream maker. That's got a nice texture and decent coconut flavour.

Because I like coconut milk and I like the idea of it in something but am not 'bakery' enough to understand how to make up a recipe myself

Also re other post I didnt know that brownies were dairy free, the ones Ive made before certainly have a shed load of butter and milk chocolate or white chocolate in them, Im not in interested in dairy free. Also they have eggs in normally

Brownies don’t usually have milk in them, I don’t think. Cake often does but not usually very much, a Victoria sponge just has a couple of tablespoons at the most. I can’t think of a cake that would use a whole tin of coconut milk, or even most of it.

Most cakes don't have that much milk or cream in.

You need fat - but you cant replace butter in cakes or brownies with coconut milk because there is too kuch liquid there too. You would swap butter for coconut oil.

If you're looking to use coconut milk for a dessert youd be better off looking for a flan or creme caramel recipe

Neither are vegan, they don't use a whole can in the brownies themselves although they both have icing that probably uses the rest of the can.

I have no idea what they taste like, it's not a standard ingredient in brownies and tbh if I wanted to add coconut flavour I imagine dessicated coconut would be better. With coconut milk you're adding both fat and liquid. I suspect that's why a lot of recipes are vegan as it fills the role dairy would.

I suppose I was thinking of recipes that might have condensed milk in them, so soft chewy fudgy type concoctions

I have some lovely fresh coconut that I have grated, plus coconut milk, I have lovely chocolate, all the other ingredients for a cakey/blondie/brownie type thing but because Im no good at recipes and understanding how things go together I cant quite work out how to put it together

In my minds eye there would be something squidgy, buttery, dense but light, that sort of thing

I thought I saw a thread on here recently that someone used a tub of clotted cream in a recipe, but cant quite remember, I love that idea

Eggs are not dairy. Dairy = shorthand for milk and milk derivatives e.g. butter, cheese etc. Eggs are not made of milk so not classed as dairy. Many things don't have dairy, not by design but because they don't need to have it. You can always add a splash of milk or deliberately choose a milk chocolate rather than plain if it makes you feel like you're sticking it to the man, lol.

Anyway I digress. Good luck with the coconut milk cake, it looks nice.

I've definitely used yogurt in cakes. Yogurt acts as a raising agent due to its acidity. And a quick google shows recipes with sour cream or coconut milk in them as well so it's not a crazy idea.

Creme caramel with coconut is delicious, my MIL makes it, her recipe is very similar to this recipe for Flan de Coco. There are versions made with coconut milk as well.

I didnt say eggs were dairy, I was continuing from my OP where I said that most of the recipes I had found for some reason were eggless, and I was saying that my brownies so far all had eggs in them

What do you mean sticking to the man, what man?

I've used yoghurt in cakes but only a couple of tablespoons. You could add the coconut cream from the top of the can in the dame way - but not the watery stuff

If I were you I'd make caramel with the coconut milk- use it in place of condensed milk. Boil with dark sugar for a couple of minutes.

Then use it to make coconut millionaire's shortbread
