Found this.....

PEANUT BUTTER MUFFINS

2 c. sifted flour
3 tsp. baking powder
1 tsp. salt
1/4 c. sugar
1/2 c. peanut butter
1 egg
1 c. milk
1/2 c. raisins

Bake in muffin pans for 15 minutes at 425 degrees.
Makes 12 muffins.

LOL oh too late for all the replies, I shoved it in anyway!

Glad to hear it will be ok, I am such a rough cook, I just spoon stuff in and eat my mistakes myself!

No. Peanut butter is not a fat. Margarine/butter cannot be substituted when it comes to baking. their role is vital. They are not included in the ingredient list for flavor but for their properties.

It's fine to use it in place of some of the fat - thee are muffin recipes where you use pureed fruit in place of some of the fat, so why not peanut butter. It is a fat, I'm sure!
