Can't go wrong with a pavlova or a cheesecake

My go to is a white chocolate cheesecake with raspberry coulis or a lemon cheesecake. I often get requests for the former!

A pavlova is super easy and can look stunning with fruit piled on the top. Maybe make a wreath shape, slight dip in the middle of the ring to hold the cream, pile on fruit. Sometimes add lemon curd to the whipped cream.

never had a proper key lime pie, but this mascarpone and lime torte has a similar vibe and is a doddle, it's a family favourite.

Also perhaps citrus for pudding is associated with warm weather? Of course it could help you pretend!

I think of chocolate, nuts or the traditional British puddings for this weather. A berry cheesecake seems good also.
