Looking for ideas on what else can I do with white cabbage please! I normally shred it and put it into stir fries or udon noodles or tacos or okonomiyake. I'll chunk it up and use it to roast a chicken on, but nobody wants to eat it afterwards as it's dripping with fat (high cholesterol household). I simply cannot go back to the days of boiled cabbage like school dinners, that would be a step too far. Does anyone have any interesting ideas? I don't live in the UK anymore so would love English/Welsh/Scottish ideas especially! Thank you!

Buttered cabbage (but I use olive oil so better for cholesterol), simple, delicious, brings out flavours in the cabbage that simply don't exist when boiled to Joe Buggery or even steamed. Let it catch slightly in places for bits of caramelisation.

Works nicely with garlic and cooked beans added. I like to used chickpeas cooked with tea bags for colour and a subtle flavour, garlic and lemon zest strips in the slow cooker. Include an onion if liked. That was an Italian recipe I found but I think it was mixed beans, I just happened to have chickpeas.

Champ, colcannon (I do a rough version with roasted and crushed baby spuds and cabbage cooked as above).

Slightly stuffed roasted cabbage wedges:

Ingredients for one small white cabbage are 3-4 cloves of thinly sliced garlic, 3-4 chopped anchovies, and about 50 g grated Parmesan, about 30 ml EVOO hot pepper flakes if you like them. Leave out anything you don’t like and feel free to use a different cheese or swap out for breadcrumbs. You may not use all the EVOO.

Preheat oven to 190C.

Core your cabbage and cut into wedges. Probably about 6 wedges to a small to medium white cabbage. Soak one wooden cocktail stick per wedge in water while you prepare the cabbage.

For each wedge: Every couple of leaves, spread the cabbage open. Spread a bit of EVOO around the leaf with a small spoon. Insert 1-3 pieces of anchovy and a thin slice of garlic. Add a couple of pepper flakes if you like heat. (Insert these at different places in different layers, so they aren’t all directly above each other.). Spread EVOO generously on top of each wedge.

Fasten each wedge with a wet cocktail stick. Roast at 190C for 15 min. Sprinkle the grated cheese evenly across the tops of the wedges. It should be thin to medium thick, depending on personal preference (we like a thin coating). Continue roasting for 10 - 20 min until the cheese is melted and the edges of the cabbage are just turning brown.

To add, look out for any recipe with Kale. Cabbage works well, especially dark varieties like Savoy. Kale seems to be named in anything a bit trendy

I had some great pickled red cabbage the other day (I think, raw soaked in a vinegar, it was at a restaurant) which I had with focaccia, paprika chicken, a red pepper sauce and some chopped nuts for crunch.

Boil the big leaves slightly (don't cut into small bits). Then stuff these with a mix of: washed (but uncooked) rice, tomato paste, dry mint, cumin, salt and pepper. Add a bit of butter and water to a pan and cook the wraps until they're ready. The water should cover the bottom of the pan but not the whole wraps themselves. This is one way "sarma" are made in Turkey. You can find a better/clearer recipe online.

Cut a drumhead cabbage into four or six wedges, so each wedge has some of the central stem holding it together. Cook in gently simmering water for a few minutes to soften slightly. Allow the wedges time to drain very well.
Meanwhile, make a cheese sauce as for cauliflower cheese. Arrange cabbage wedges in a dish, and pour over the cheese sauce, scatter with extra grated cheese.
Bake until golden and bubbling. Goes well with baked ham or roast beef or sausages.

Simmer large whole cabbage leaves gently for a few minutes. Cool, and stuff with a spoonful of your favourite bolognaise type recipe. Roll up the leaves, place in a dish, and add a cheese or tomato sauce. Bake till bubbling.
You can make this a very economical dish by adding beans, chickpeas, cooked rice, leftover potatoes etc to the filling.

Wow, wasn't expecting so much cabbage-knowledge! Thank you all! Some really delicious sounding ideas here: love the idea of fritters, colcannon (maybe in soup form?), cabbage cauliflower cheese, for cannelloni instead of pasta shells, sarma. It's bitterly cold here today so I think I'm going to do a cannellini bean/cabbage soup with a fennel bulb I have in the fridge, with toasted cheesy baguette slices. I do use cabbage in salads but it's just too cold to countenance such a thing today, I'm sitting under a heated blanket with a cold nose as I type this ❄

I think cabbage lends itself well to pork. I'm thinking I could do a chorizo/bean/cabbage soup with the other half of my massive cabbage next week.

Big fans of gochujang here, so wondering how to use cabbage, pork and gochujang for a main meal (rather than Sodha's side dish). And I think pomegranate molasses would cut through gochujang nicely, as non-traditional/fusion as that might sound!

-Cabbage cooked with other greens like peas, broad beans, green beans or whatever greens I have. Better with some cooked bacon, but not good for cholesterol!

Chop up a leek, sauté in oil and butter, add crushed garlic and cumin seeds, add shredded cabbage and sauté, then stir in grated carrot and cook for a couple,of minutes. Season. Can add cream or yoghurt of you want it moister.
stuffed cabbage leaves, a la Greek, is lovely

OMG if someone made that for me today I'd scoff the whole thing. I'd have to add garlic/herbs/spices of some sort but this sounds DELICIOUS 😋

Shred really finely, steam gently until cooked but with some bite still in it. then add in some herb butter. Mint goes well, I sometimes use mint sauce. Dill butter is nice if you are serving it with fish.

Cabbage with potato is so incredibly moreish. Colcannon/bubble and squeak with an egg is one of my favourite cheap and easy meals. I make extra spud specifically for the leftovers.

Pearl barley stew - saute onions or leeks and chopped carrots, add pearl barley and stock, simmer till nearly done, stir in chopped cabbage. Also works well with lentils. Add bacon if you want, or pork meatballs

Chorizo and bean stew as you said - saute sliced chorizo and onion, add stock and beans/chickpeas/new potatoes (a mixture is best, obvs potatoes need longest cooking), simmer till done, add chopped cabbage near the end.

Ham, cabbage, onion hash

Stir fry with garlic and a bit of oyster sauce for a good side to SE asian dishes

the simplest… boiling water for about 2 minutes then drain and stir in some butter… delicious
