Need to use up Greek yogurt

But already had it with honey and fruit. Would like to have a recipe for soup if possible, anyone got any?

We used some up making a mushroom stroganoff. Substituted it for sour cream.

I know you said soup, but you could make flatbreads to go with some soup.

But as pp says it'll last weeks past the date if that's what you're worried about?

We use yoghurt a lot. As suggested here in flatbreads. I often use it in a tomato based sauce if I want to tone it down a bit (or creme fraiche, or cream, or milk, or cream cheese - whatever I have lying around really). Tzatziki, obviously. Overnight oats (good shout - might do those for DS and DH tonight as haven't done for a while). Smoothies. Dolloped on curry when I've made it too hot (mixed with chutney sometimes to make a sort of sweeter version).

Lots of people swear by marinating meat in yoghurt - I haven't done it though.

Pizza dough.
Equal amounts of yoghurt and self raising flour - 10oz of each for 4 individual pizza bases, plus a 1/2 teaspoon of baking powder.

Mix to combine and then knead until smooth and not so sticky.

Lots of cake recipes use yoghurt. I’m gluten free and make a lovely marmalade cake that I use Greek yogurt in.

Beat together 4 tablespoons of yoghurt, 2 tablespoons of mayo, a crushed garlic clove or two, and a drizzle of olive oil. Use as a dressing for a vegetable salad (eg onions, peppers, cucumber, sweetcorn, potatoes) or pasta. Enough for 4 or 5 servings.

Whizz it up with feta cheese and a drizzle of olive oil or garlic olive oil plus add some lemon zest if you have some. Eat with crudités and breadsticks

Mix it with a few herbs, strain it through a clean cloth and you have cream cheese.

I usually buy the full fat version, but I can only find it in 500g tubs, so use as much as I can for a few days and then I'm still left with some after the use by date.

How do I know it's still good to eat?

Just take the risk and use your nose. I'm sure it's fine. It may become a bit more sour as the bacteria in yogurt grow. Have the rest for breakfast with seeds and nuts or fruit.

It will be fizzy if it's past its best. Just try a tiny amount on the tip of your tongue.
I am currently using a tub with a best before of 23rd dec and it's fine.
