What are your plans for your leftovers?

I have loads left, no one in my home is a fan of curry or soup. Apart from a pie I am a bit stuck for ideas…

Well, apart from a sandwich that is!

Turkey/Ham/Leek pie here too with a layer of stuffing on top then puff pastry, the stuffing stops the pastry getting soggy underneath and we love it! Leftover gravy added to the sauce yum.

I take an unsliced crusty loaf and cut the top off and remove the bread from the inside to leave a shell, then layer whatever leftover I have (veg, meat, potatoes, stuffing etc) inside, press it down and add gravely over the top. Put the bread lid back on, wrap in tinfoils and bake in the oven for about 30 mins.

Slice and serve with salad or sliced fried roasties. It's a bit like a Christmas dinner meatloaf but very tasty!

Shred the meat. Saute some bell peppers cut into strips and some grated carrot in butter. Use up any leftover sprouts too! Add the meat, throw in a good dollop of wholegrain mustard and some honey, stir over heat until the sauce thickens and starts to caramelise.

Serve on a bed of cheesy mash and peas.

I unleashed the panini press at lunch times. Put out chopped turkey, gammon, stuffing, bread sauce, cranberry sauce, veg, pickles and chutneys and everyone had toasted sandwiches/wraps/pitas. It went down a storm.

When I was working one of the things that got me through January was that I would make a lot of sandwiches a day or two after Christmas Day and freeze them. Then once or twice a week until they ran out I had a ready-made lunch. Bread well buttered to help minimise sogginess. One batch would be ham and mustard. I will admit that turkey and cranberry sauce (with stuffing ideally as well) did go a bit soggy at times but I still enjoyed it. Careful construction with the cranberry sauce in between turkey and stuffing, or in between two slices of turkey, would help a lot there. I used to freeze them in freezer bags or leftover bread bags and take them out the night before to defrost in the fridge.

Still do it now even though I'm retired. Nice to have an instant effortless lunch sometimes.

This is genius. Am definitely doing this, have far too much gammon left and it was lovely gammon. Might put cheese and red onion in too, for toasties.

Made white sauce and chucked ham, turkey, stuffing, pigs and sweetcorn in it.

I'm assuming that you have a cupboard/freezer full of ingredients:

  1. "paella". You can probably pop some paprika in to compensate for the fact you are using ham, not chorizo. Prawns, rice, frozen peas and sweetcorn plus diced pepper if you have one. Merchant Gourmet do a Spanish grains mix that works well with this sort of leftovers.
  2. Turkey and ham special fried rice
  3. Enchiladas (so wraps/burritos stuffed with a turkey and black bean tomoato/spice/onion mix, covered in a tomato sauce with cheese on top)
  4. DIY pizzas (or plainish shop ones) with ham and turkey shredded on top (and a few bits of mushroom and sweetcorn if you have it)
  5. Noodles - ideally you would have some miso paste, but I suppose a stock cube could sub. Add some Udon or Ramen (or any noodle I suppose) shred some turkey and greens and carrot. Spice it up to your taste.

Turkey and/or gammon cottage pie....make a white sauce or use left over gravy, dice meat, add suitable vegetables eg broccoli, peas, sweetcorn, onions, mushrooms, green beans, leeks. Top the sauce meat vegetable mix with mash potatoes, add cheese if liked. Bake till golden and bubbling.

I've just made this devilled turkey salad. It was good. If I made it again I'd up the mustard powder and garlic quite a bit. The recipe method mentions butter which isn't on the ingredients list. I used a good big lump. I added some Worcestershire sauce and instead of making vinaigrette to serve with it we had some Caesar salad dressing I happened to have in. It's very like a Caesar salad.

Pasta bake. Chopped turkey and ham, jar or two of cheesy white sauce, folded into cooked pasta, sprinkled with grated cheese and baked until bubbling. I'd boiled the carcass and made stock so I tossed the turkey in a couple of tablespoons of that before adding to the sauce
