Veg box recipe ideas

Hi
I get a weekly veg box and I'm struggling with ideas for things to cook.
I've got 3 children under 2 (2 under 1) so need to be baby friendly/easy to eat but good for the whole family, I can obviously modify things and add in extra ingredients.
I've got adhd and really struggle with thinking of things to cook as I have so many ideas I just get overwhelmed then leave it til dinner time.
Any favourite, easy and fairly quick to prepare (I have a 1 hour child free nap slot each day to prepare dinner!), thank you!

Red cabbage
Savoy cabbage
White cabbage
Cauliflower
Parsnips
Brussels
Carrots
celeriac
Aubergine
Courgette
A lot of potatoes!

Cabbage & Potato Frittata

Turkey and Vegetable Stir-Fry (Minced turkey, carrots, courgette, red cabbage, soy sauce, garlic, ginger (optional), olive oil, serve with noodles or rice)

@xmasdealhunter ah frittatta! Yes I go through phases of making these then forget about them, thanks for reminding me!
And yes stir fries are an excellent idea for using lots of my ingredients

No Worries! Soup is another one that you could make with most of those ingredients, and it freezes well (I've got some of these souper cubes and they're brilliant, because each block is one portion, but you could also easily freeze in a tupperware.Souper Cubes Silicone Freezer Tray | Lakeland)

I'd make a winter slaw - jamie oliver has a good recipe. It lasts a while and if the kids won't eat it you'll be able to have it on the side of anything you cook for them.

Roast the aubergine and courgette and make a pasta sauce.

Baked potatoes....

We like to saute cabbage (one, two or three types at a time), ideally with some kind of onion - red onion or a sliced leek - long and slow with some oil and butter and salt. I usually add a little garlic oil as well. It's a lovely side dish and can take a lot of cabbage/onion.

Celeriac dauphinoise is AMAZING. I haven't actually made any for a while but I basically looked up loads of recipes and then created one that worked for me and we had that about once a week for a while a couple of years ago <adds celeriac and cream to order for post christmas>

Aubergines, courgettes, parsnips are all good roasted. If you have tomatoes, you could roast them WITH the tomatoes and some garlic. Then blitz with some cream cheese/extra oil/ creme fraiche - it makes a really nice roasted veg pesto which is very kiddy friendly (and freezes well in individual portions if that's helpful). If you have nuts and can eat them, adding some walnuts or hazlenuts or pine nuts to the blizted up veg can be nice.

Are you actually vegetarian? if not, make mounds of mash with the potatoes and then freeze for using with shepherds pie, a normal fish/meat and mash meal etc. Also, I saw a very interesting idea I've been planning to try where you freeze the mash in the shape of your preferred baking dish .... so when it comes to your shepherds pie you don't even have ot defrost the mash, just add it directly on top and stick in the oven!

@xmasdealhunter I do love making soup but it's tricky for the little ones but I guess I could just make some for myself and they can have a picky lunch and I can do them some bread dipped in the soup!
@BigDahliaFan thank you yes a slaw is a great idea, and baked potatoes although I've not managed to serve them in a way that the little ones like them yet
@OhBling that cabbage recipe sounds lovely I will give it a go, would it freeze do you think?
A dauphinouse is such a good idea for the celeriac, the only thing I'd thought of was puree which is hard for the kids but I'm definitely going to give this a go! And your pesto recipe sounds yummy too, it's things like that i find hard to think of off the top of my head and putting ingredients into Google never comes up with stuff like that!
We aren't vegetarian but I feel funny about eating a lot of meat so we don't buy much but omg what an amazing idea for freezing the mash in the shape of the dish for a Shepherds pie, my kids actually love Shepherds pie so that's firmly on the list!

I've always like a baked potato with the insides scooped out, mixed with cheese and put back in the oven for a bit....that might appeal to kids.

I am not sure if the sauteed cabbage could be frozen. You could certainly give it a go?

The cauliflower you could puree and add it to maccaroni cheese.
