Ideas for Simple Filling Vegetarian Family Meals (and recipe book recs) please!

Im a basic family cook lasagna chillis etc. My youngest daughter is now vegetarian so I prefer to make one meal thatll work for all of us so needs to be made in 1 hour and quite filling

My repertoire only currently consists of;

mushroom/asparagus risotto
quorn mince keema
veg pasta/lasagne
veg sausage and broccoli pasta
cauli mac and cheese
dhal flatbread/rice

Its too pasta heavy right now and Im bored already so would appreciate some suggestions thank you

Fajitas. Plonk the plates in the centre of the table and everyone helps themselves. Savoury rice, refried beans, grated veggie cheese, lettuce, peppers/onions/tomatoes fried with some fajita or taco mix. Could add quorn slices too.

Baked potatoes/sweet potatoes. Veggie mince or chilli, coleslaw etc

You can adapt some of your normal meals. For lasagne swap the meat for green lentils (cook in a slow cooker, use your normal recipe otherwise but add some water as the lentils will absorb lots of water). For chilli use a mix of beans - I tend to use black beans, borlotti beans and kidney beans.
Also try some recipes with tofu - it works well in recipes like Thai curry, or stir fries. If you haven't tried tofu before it can be a bit of an acquired taste - don't expect the texture of chicken, its more like omelette in texture. Follow a recipe for tofu rather than using it as a direct replacement for meat.

If you have no vegans, then paneer in curries is a nice easy addition to the meal rotation

I'd say, as someone who's dabbled with vegetarianism and veganism in the past, read up on nutrition. After quite a long spell as a vegetarian, I ended up quite malnourished and deficient in a lot of vitamins etc. (After a spell as a well informed vegan though, later on, this didn't seem to be the case. I still did end up with doubts though hence now eating a tiny bit of meat and fish and a few eggs each week.)
In terms of recipe books, I have quite a few old Rose Elliott

Haloumi fajitas.
Stir fries with omelette strips or cashews instead of meat.
As mentioned by others frittatas, shakshuka and quiche.
Field mushrooms or peppers stuffed then topped with cheese and bread crumbs.
Root veg casserole.
There's no end of veggie curries.

East by Meera Sodha - lots of rice and noodles. We eat the egg fried rice and paneer aloo gobi more often than I like to think about.

We are a veggie household and eat loads of curries, dals, stir fries, chilli and wraps. We probably eat as much rice as you are currently eating pasta!

Stir fry with marinated tofu (get that so it has flavour)
Vegetable casserole with dumplings
Use orzo or gnocchi if you are getting a bit bored of pasta
Soups with bread and cheeseboard
Thai green or red curry with noodles or rice

I have the big Rose Elliot book, and I have to say, I'm not a fan. Yes, there's some good stuff in there, of course, but many of the recipes are over-basic and dull. You read the ingredients, and think, how tasty is that going to be, it's just a fried onion, a tin of kidney beans, and a tin of tomatoes. As a long-time veggie, the recipe book I've used most is Madhur Jaffrey's Eastern Vegetarian Cooking (1983!). Reading her wiki entry, she is quite a woman. Still going strong at 91. Apparently she introduced Merchant to Ivory!

In case anyone is interested: I tried the Mexican Enchiladas recipe in the Delia provided by @nameXname above. i did half quantities; I figured that would be about right for a main meal for one (two enchiladas). I also thought all cheese and creme as a filling was a bit much, so decided to mix in some mashed seasoned kidney beans and a sprinkle of chilli flakes. I used half a tin. You'd want to set aside some cheese mix for the topping first, though. It was very nice, but if I made it again, I'd double the quantity of salsa. And perhaps cut down on the creme fraiche.

Start by thinking about dishes that are vegetarian without any changes so beans on toast, baked potatoes, lots of things can be made with eggs.

Do not be scared of frozen and tinned food. A packet of frozen mixed veg can be the basis of a curry or a lasagne.

Have a look at Indian food, a lot is vegetarian, you could make pakoras with just about any veg and serve a sauce or chutney on the side.

Passata can make a base for a lot of things, chilli, pasta even curry.

I'd cook too much at least once a week and then use flour tortillas, fold them around the left overs, add a bit of cheese and any spices you like, put in a baking tray with the 'join' underneath and then bake for 20 mins.

I also use the same recipe and make into smaller meatball size and cook on an oven tray turning over half way through and serve with pasta or rice and tomato sauce. Or burger shape and do burgers...

I rely heavily on the Good Food website and Cranks. I had hoped someone would buy me this book for Christmas, but it looks like I'll have to buy it myself. Madhur Jaffrey is also a shero for veggie cooking.

I do recommend the Pukka Vegan pies as a standby, and we like the Goodlife bean burgers from Ocado, though they are expensive.

I am a meat eater. I eat veggie for my daughte.

We eat a lot of veggie meals that I used to make with meat and now with alternatives. I usually think about making sure that the protein source varies over the course of the week. So meals might include stir fry, Indian curry, Thai curry, bolognaise, noodle dish, tacos, pie etc. Across the week for protein we'll have one cheese (paneer or halloumi), chickpeas, lentils, black beans, refried beans etc and then lots of vegetables in each. I also use the Green Roasting Tin book
