Cooking steak in advance

onedayatatime73 · 20/12/2024 13:49

We have 8 people for dinner tomorrow and I am cooking rib eye. Is there a way of cooking it in advance without it drying out? Our table is in the kitchen and don't want to cook it whilst everyone is there.

Water bath it the night before and just seal it on the day

Honestly - really not. I would do something else if you want to do it in advance.

BIWI · 20/12/2024 14:00

No - you will ruin it!

InveterateWineDrinker · 20/12/2024 14:33

You could reverse sear it, but honestly it's not the thing to try for the first time when entertaining for eight.

Essentially, place them in the oven at the lowest temperature your oven will hold, until they are 'done' to the level you want, then sear them on the frying pan to finish off. Plenty of methodologies on the interweb.

Absolutely not. Put something in the slow cooker if you don't want to cook in front of guests

Ilovemyshed · 20/12/2024 14:35

Seriously just no. Slow cook it into a casserole if you want but don't ruin it by cooking ahead.

Ilovemyshed · 20/12/2024 14:36

Or do it on the bbq outside if its not raining 🤷🏽‍♀️

No, no I wouldn’t cook steaks way in advance. But they are meant to rest so no need to leave them to the last minute. Rare ribeye is my favourite 2 mins a side yum. Definitely cook them whilst they’re there!

No.

TheSandgroper · 21/12/2024 07:35

In a word, bbq.

Mumofthree8 · 21/12/2024 07:56

I have the same set up (kitchen /table together) and always delegate steak cooking to my husband on the BBQ outside: the larger cooking surface means we can cook them all at the same time! Whereas inside they need to be done in batches

I have never done this but remember s programme she did it in so just googled.

Mary Berry has a recipe where she cooks the steaks in advance to avoid a smoky kitchen and lingering smell - part of a BBC series:

Thank you. Am going to do half of them a la Mary Berry (for the kids) and the adult ones when they're here. Thanks so much

Oh sorry cross post with @julie81! I remember watching the episode and thinking it was a clever idea, but I've not yet tried it myself. Let us know how it goes OP!
