love halloumi but have never cooked it

grilled with salad?

or do you have a more daring idea?

I grill it or pan-fry it and have it with really yummy Greek-style salad with loads of olives and dressing. I also make halloumi 'toasties' with wholemeal pitta bread.

My sister does a gorgeous dish involving lots of roasted veg and butternut squash with fresh herbs and halloumi on top, all baked in the oven. Tis fab.

Sliced and grilled with leaf salad and grapes. Or there's a nice Nigella recipe which involves red potato, sweet potato and peppers, chopped and roasted and topped with slices of halloumi.

have done it as part of veggie kebabs - peppers , courgettes, red onions, mushrooms and squeaky cheese (love it - must start syaing that more!!!!) served with pitta and houmous.

It's my regular 5 minute dinner. Chop up an avocado and some cherry toms. Sprinkle with olive oil, tabasco and lemon juice. Serve with hot fried squeaky cheese. It's not very adventurous but it takes seconds.

I sometimes have it on top of pizza, esp with spinach, or fried in little cubes and thrown on top of pasta.

It's nice barbecued (after all the meat's been done because it doesn't take long). I've also used one of those griddle pans to fry it. Serve with lots of salad and pitta bread.

MMmmmm, think I need to buy some too!

Slice, pan-fry, put in sandwich with houmous, rocket and sliced tomato. Pitta is the more 'authentic' option, but seedy wholemeal bread is very very good.

This is a bit prep-heavy, but really nice:

Halve two red peppers, brush them with oil, roast them in oven at highest setting until skins blacken. Take them out, put them in plastic bag and leave to cool.
Boil some new potatoes.
Slice a red onion thinly.
Fry halloumi until brown, squeeze over half a lemon and add chopped fresh mint.
Make the dressing: tablespoon of honey, two tablespoons of olive oil, tablespoon of balsamic vinegar, finely chopped clove of garlic, teaspoon of wholegrain mustard, salt and pepper to taste.
Take the cooled peppers out of the plastic bag, peel off the skins and slice.

Combine all the above ingredients while the potatoes are still warm. Serve on bed of leaves.

great salad involving rocket, avocado, halloumi and dressing of lime juice and olive oil - think it's originally Delia.

Goes brilliantly with puy lentils and whatever roast veg you like, add plenty of flat leaf parsley and lemon juice.

Roast sweet potatoes, small salad potatoes, red onions, garlic and rosemary, serve on lots of herb salad, add your halloumi and a a spoonful of soy sauce and toasted pumpkin seeds. Yum.

Brush with a bit of harissa sauce before griddling it - serve up with tabbouleh or similar.
Not sure about combining with chorizo - might be too much salt together? But halloumi and capers is fantastic, whatever
else you add. I have also seen a recipe for marinating your halloumi overnight with the juice of a lemon (plus water to cover), then frying in a dry pan, to remove a bit of the salt and add more flavour - have never tried it but sounds good.
