Frozen gammon past use by??

Help!
We bought gammon and beef and froze it before the use by date and intend to cook on Xmas eve to eat on Xmas day which would be past the use by date. How long would it keep after cooking if it’s past the use by date, would it be ok to eat the day after cooking?

Yes absolutely if I have understood you correctly. You froze it before use by, plan to defrost and cook then store in the fridge until next day? That will be fine.

Was watching an old Jamie Oliver today and he said a cooked ham would last 10 days in the fridge. Personally I like to use cooked meat up within 4 days but I'm always worried about food poisoning. So yes it will be absolutely fine for boxing day, the use by date is irrelevant in these çircumstances. You can also freeze the cooked meat if you have too much, it is not the same as refreezing thawed out raw meat. I cooked a small gammon a couple of weekends ago to test it for xmas, then sliced the cold meat up the next day and froze it in small portions sufficient for my sons packed lunch sandwich for work. He's eaten it all and still alive😃

Same as it would if before the use by date. I’d probably use a gammon, properly cooked and then refrigerated, for 4 days.

Items keep for months in the freezer. Once you cook them they are ok to eat for several days afterwards as long as you keep leftovers in the fridge

Ham/gammon is salted which is a preservative so it will last longer than fresh meat. Use by dates are more for fresh bought food. Freezing extends this but once defrosted will need cooking within a few days.

Defrost your ham and cook within a reasonable time. Once cooked, it will last some time. To extend it’s keeping, the best way to store it is in the fridge in a cotton bag that has been soaked in a vinegar and water solution. Soak again every couple of days to keep the cloth damp.

For next year, if you think you have too much, get a hacksaw and a sharp knife. Slice and saw your ham into pieces that suit, double wrap in foil and freeze. I buy a 6kg leg each year and get five pieces. One for Christmas and the rest at other times.

It'll be fine.
I normally slowcooker the gammon on xmas eve to finish in the oven on boxing day, and we'll be munching it until new years eve. Freezing before the Use By date stops the clock, and it will keep frozen for 3-6 months depending on your freezer. Once you defrost it treat it as normal in terms of keeping of keeping after cooking.
